Badaami Korma
Ingredients for Badaam Paste:
Fried onion 1 cup
Almonds (peeled) 1/2 cup
Cumin seeds 1 tbsp
Mace 1 piece
Poppy seeds 1 tbsp
Green cardamom 3-4
Water 1 cup
Ingredients for Badaami Korma:
Oil 1 cup
Black cardamom 3-4
Green cardamom 4-5
Long (cloves) 4-5
Bay leaves 2-3
Cinnamon sticks 2-3
Mutton 1 kg
Ginger garlic paste 2 tbsp
Red chili powder 1 tbsp
Garam masala powder 1 tsp
Kashmiri red chili powder 1 tsp
Coriander powder 1 tbsp
Salt 1 tsp
Yogurt 1 cup
Prepared badaam paste
Water 3-4 cups
Almonds (peeled) as required
Green coriander (Chopped) as required
Directions for Badaam Paste Preparation:
1. In a blender add almonds, fried onion, cumin seeds, mace, poppy seeds, green cardamom, water and blend it well. Set aside.
Directions for Badaami Korma Preparation:
2. In a pot heat oil and add black cardamom, green cardamom, cloves, bay leaves, cinnamon sticks and cook for a minute.
3. Add mutton and cook until it changes color. Add ginger garlic paste and cook until it changes color.
4. Add red chili powder, garam masala powder, Kashmiri red chili powder, coriander powder, salt and cook for 2-3 mins. Now add yogurt and cook for 4-5 mins. Now add badaam paste and mix it well.
5. Add water and cover and cook until fully done.
6. Dish it out and garnish it with almonds and green coriander. Your Badaami Mutton Korma is ready.
