It's called Dum style biryani (the coals help cook the par boiled rice properly). Cooking proper biryani traditional style is a time and labour intensive work..and yes the covered cooking does give it a taste as it integrates the rice with the mutton/chicken/ spices ..and if you add a coal with ghee and cloves on top and cover it ..it will add smoky flavour to biryani..

Welcome back Jodi 😍. We make biryani at home but the taste and effort is no where closed to what they are doing. Yes cooking a good biryani specially at that quantity will take a whole day. That's why usually people will have it on special occasions.

being from Kerala, i can mostly understand what they are speaking since Tamil is very similar to Malayalam and that is such a privilege compared to most people and i can almost taste the food in my mouth. such a great video and I'm glad that you guys enjoyed the video. personally i don't know why they layer it but it is a common practice in biriyani making. then again, I'm not much of a chef.

Biryani is traditionally a celebration/festival food and not a cook up at home everyday food. Because it is usually served to guests, cashew nuts and boiled eggs are used as extra garnishes to bump up the richness of the dish and make it feel even more deluxe. Eggs, meat, and nuts are relatively expensive food items in India and using them is a way of going all out.

Obviously not NOW but Mughlai cuisine was introduced into India in 1200s and such foods were not available to the regular people, only the wealthy ruling class. Dishes such as Biryani which are common in any roadside restaurant these days were very much “palace food”

There are atleast 3-4 different styles of biryanis with regional influences .each unique on its own..

Not 3 to 4..Almost every state has its own type of special biriyani. So there are almost 20 different types.

@@NikhilChaudhariimbevda i was talking about that. Like Tamil Nadu has a variant, so is in Kerala which has Thalassery biriyani which is the popular on among other types in Kerala. There's Hyderabadi one in Telengana.... Etc etc... Each one is made in different manner and uses different ingredients.

But Biryani, Pulav is an Iranian cuisine not Indian cuisine ( may be different variation of it made by mughals by adding Indian ingredients.)

The eggs are for extra protein and flavor. Depending on the city (there are a lot of varieties of biryani in India depending on the city or region. Think: Texas vs Virginia vs Louisiana vs Kansas City barbecue) you might find a whole egg in your biryani or maybe a whole boiled potato. You are sure to find chunk(s) of meat along with the rice.

Mutton, for some reason, is the English word for goat meat in India. Mutton in the west usually refers to sheep, older sheep at that. Most meat eating Indians who arrived in the west back in the '60s through the '80s were usually rudely surprised when they got home to cook the mutton they had brought home, and found it to be meat from old sheep rather than younger goat meat. The smell and taste are very different.

Thank you for reacting to my request 👍....Goat meat is lean meat and is quite hard to get even in India... Mutton in India usually means goat but there are varieties of mixed breeds too

Adding the burning coals/ash on the lid along with the ashy coals below basically creates an oven out of the biryani pot, allowing the rice to steam and cook evenly at low heat without burning.

That's Eggplant curry they put on top of the Biriyani before eating....Boiled eggs complete a Biriyani in the South of India, In Kolkata they prefer Potatoes to eggs

Biryani is my favourite dish , chicken and mutton. Takes me 3 to 4 hours for mutton b and 2.5 to 3 for chicken. So.yum but a little complicated. The layers are essential for the right biryani texture and flavour

Rice was 80% cooked and rest of the cooking took place after putting burning coal on the cover of the pot. Eggs are there to motivate eater when meat is finished in rice. although these are only boiled eggs but it is required to light fry eggs after boiling...most important part is putting coal(burning) on cover of pot to fully cook rice in steam, it also separate rice from each other . the made a mistake they mixed all layers at last .They killed the purpose layering. we remove meal layer by layer when serving and cut layer by a plate of sharp edge. when one layer is finished than we use layer below it. There are many recipe for cooking biryani , easier than this one..like Hyderabadi biryani. using curd (curd+ sweet pine apple chips or green chilli fine chpped + a pinch of black salt powder and roasted coriander seed powder )salat with biryani make it more delicious .

Try mutton biryani in rasoi (Tampa , Florida) I guess they make the best biryani.

One problem, they live about 4,000 Km from Tampa. That is about the distance from Delhi to Rome. :)

@@edwardspencer9397, lol! Um...that's not how things work here in the US, bubba. This isn't a train or bus ride from Meerut to Delhi. The distance is greater than Ladakh to Kanyakumari. And security regulations make it difficult to carry on most food items.

I had cooked dum biriyani with readymade off the shelf spices and it took me 3-4 hrs. I think better cooks can do it quicker and tastier.

Biryani is not exclusive to Northern India. It is very popular in all the South Indian states and you will even find some regional variances. Granted this dish was probably brought in by the Muslims, but you forget there are lots of muslims in every South Indian state.
