Mutton Madfoon
Ingredients for Mutton Marination:
Mutton (Shoulder Piece)
Cumin powder 1 tbsp
Red chili powder 1 tbsp
Garam masala powder 1 tsp
Salt 1 tbsp
Hot sauce 2 tbsp
Coriander powder 1 tbsp
Paprika powder 1 tsp
Oil 1/4 cup
Lemon juice 2 tbsp
Aluminum paper as required
Potatoes (peeled) 3-4
Onion (half cut)
Ingredients for Rice:
Oil 3 tbsp
Onion (sliced) 1 cup
Cumin seeds 1 tbsp
Black cardamom 2-3
Star anise 2-3
Black peppercorns 1 tbsp
Water 5 cups
Salt 1 tbsp
Soaked rice 3 cups
Ingredients for Garnishing:
Roasted raisins as required
Green coriander as required
Directions for Mutton Madfoon Preparation:
1. Take the mutton piece and place cuts on it with the knife. Now add cumin powder, red chili powder, garam masala powder, salt, hot sauce, coriander powder, paprika powder, oil. Lemon juice and marinate the mutton for 1-2 hours.
2. Place the marinated mutton on an aluminum paper and wrap it well.
3. Place it in a preheated steamer and steam it for 2-3 hours over low flame. Now take it out of the steamer, remove the aluminum paper and set aside.
Directions for Rice Preparation:
4. In a pot heat oil and add onion. Cook until it gets brown. Add cumin seeds, black cardamom, star anise, black peppercorns and cook for a minute.
5. Add water, salt and bring it to a boil. Add rice and cook until 80% water dries out.
6. Now cover and steam over low flame for 10-12 mins.
7. Serve it with the prepared Mutton Madfoon and steamed veggies. Garnish it with roasted raisings and green coriander. Your Mutton Madfoon is ready.

Cooking time: 3 ½ hours
Servings: 4-5
