Mutton Roghani Masala & Pita Sandwiches & Kiwi Mint Lemonade | Chef Shireen Anwar | Masala Mornings | 5 August 24 | MasalaTV
MUTTON ROGHANI MASALA RECIPE :
Ingredients for Marination :
Mutton 750 gm
Desiccated coconut 2 tbsp
Roasted poppy seeds 1 tbsp
Roasted peanuts 1 tbsp
Green cardamom 3
Cloves 2 grounded
Green cardamom grounded 2
Small onion 1 boiled and grounded
Roasted & ground cumin 1 tsp
Roasted & ground coriander 2 tsp
Turmeric ¼ tsp
Chili powder 2 tsp
Allspice 1 tsp
Black pepper ½ tsp
Salt 1 tsp
Yogurt ½ cup
Ginger garlic paste 1 tbsp
Coriander leaves ½ cup
Brown onion grounded ½ cup
Tamarind pulp 3 tbsp
Oil ½ cup
Green chilies and coriander for topping
METHOD :
Apply marinade to mutton, and keep it for a few hours. Heat oil, add mutton, cook on high flame for 5 mins till everything gets heated, lower flame, simmer for 1 hour till mutton is tender and oil comes on top, finally add coriander and green chilies, serve with nan.
PITA SANDWICHES RECIPE :
Ingredients :
Boneless chicken breasts 2
Oil for deep frying
Ingredients for the Marination :
Crushed garlic 1 tbsp
Crushed ginger 1/2 tbsp
Finely minced onion 2 tbsp
Lemon juice 2 tbsp
Baking powder 1/2 tsp
Egg 1
Fennel powder 1/4 tsp
Turmeric powder 1/8 tsp
Paprika powder 1-1/2 tsp
Red chilli powder 1/2 tsp
Red chilli flakes 1 tsp
Cumin powder 1/4 tsp
Oregano 1/2 tsp
Salt 1/2 tsp
Light soy sauce 1 tsp
Sesame oil a few drops
Rice flour 1-1/2 tbsp
Flour 1-1/2 tbsp
Oil 1-2 tbsp
Ingredients for Toum Sauce :
Garlic 15 cloves
Salt 1/2 tbsp
Ice 1 cube
Oil 1-1/2 cups
Ingredients for Tandoori Mayonnaise :
Mayonnaise 1/2 cup
Cream 2 tbsp
Tandoori masala 1-1/2 tbsp
Chilli sauce 2 tbsp
Clarified butter 1 tbsp
To assemble Sandwich :
Onion rings as required
Sliced tomatoes as required
Cheese slices as required
Butter to grill
Method :
Cut the boneless chicken breasts into thin slices. Prepare marinade by mixing chopped garlic, chopped ginger, finely minced onion, lemon juice, baking powder, egg, fennel powder, turmeric powder, paprika powder, red chili powder, red chili flakes, cumin powder, oregano, salt, light soy sauce, sesame oil, rice flour, flour, and oil. Marinate chicken and later deep fry. Mix mayonnaise, cream, tandoori masala, chili sauce, and clarified butter to prepare tandoori mayonnaise. Blend garlic, salt, ice cube, and oil to prepare the toum sauce. To assemble the sandwich, spread tandoori mayonnaise on pita bread. Now add cooked chicken, onion rings, sliced tomatoes, and cheese slices. Apply toum sauce on the second pita bread and cover the sandwich. Heat the grill pan and grill the sandwich with butter. Cut the sandwich into wedges before serving.
KIWI MINT LEMONADE RECIPE :
Ingredients :
Kiwis 2
Pineapple chunks ½ cup
Mint leaves ½ cup
Sugar ½ cup cooked with ½ cup water
Black salt ¼ tsp
Lemon juice 2 tbsp
Lots of ice
white fizzy drink ½ bottle
METHOD :
Blend kiwis, pineapple chunks, mint leaves, sugar syrup, black salt, lemon juice, ice cubes, and white fizzy drink.

Bery un organaiser show she didnt made garlic sauce in front pf us she made tandori sauce earlier she missed some of the marination ing what she is doing
