I thought I was loosing my mind, and wondered, do others have trouble with there baked cakes, pies, cookies etc. as I did until I realized my new convection oven at home is unlike the commercial bakery ovens I had used in the past, it was detrimental on the final outcome of my baked goods. So I will reserve my convection oven for meats, casseroles, baked potatoes etc.
After further research and realizing if you only have a convection oven then baking at 20% less of time and 20% less of temperature might help. (The heat , quick air causes the foods to not rise or be very dry... as my cakes had no rise, my cornbread had concrete crust, my cookies fell apart) etc. etc.

Certain baked goods, however, are best cooked using conventional oven settings. Avoid convection baking foods like cakes, quick breads, custards and other delicate desserts and pastries.
