Honestly you are one of the most underrated cooks on RU-vid. You can make things from scratch but also know how to make things good when you’re in a pinch. As a Mexican American who never learned how to cook a lot of food, I always love watching your channel, your food reminds me a lot of my grandmas. Buen provecho 😋
SAAAAME!! I now live in the UK and have to really be creative when I cook Mexican food but with her tips i've been able to pull off some really great dishes.
Try using bone in , with skin chicken. Not as dry and the flavor is fabulous. Also try a can of Campbell’s Cream of Mushroom Soup in the salsa verde. Talk about a creamy addition. Mmmmmm.That’s a fabulous taste as well. Love watching you. I was in the business from 1967 to 2007. Cooking is my life even in retirement and senior age.

Looks good. One thing I would change is, I don't like the extra oil on the tortillas. I will warm then in the microwave to get them soft and pliable. Also, not sure where you are located, but Las Palmas enchilada sauce is also very good. I use the Herdez sauce as well, sometimes both. Thanks for sharing.
I loved watching your quick version of what we call Salsa Verse Chicken in my house. We do the chicken in our crockpot with the salsa, garlic powder, onion powder, bullion. It is so crazy simple and delicious! I loved your Mexican rice!

A note on the rice; many American brands of rice are Enriched! And do not need to be rinsed. Please check before cooking. The recipe looks delicious! Thanks for sharing!
This is so true. After watching all these videos where they say to rinse your rice I looked at the directions on the packages. No where did it say to rinse it. I then called the 1-800 numbers. The customer service reps said NOT to rinse the rice.
I think it tastes better rinsed regardless of brand or county of origin though I do love to use jasmine rice., it's the only kind I purchase. When I get rice from food pantries, usually an American rice I still rinse
i CAN NOT find the herdez verde salsa in MILD at all and the medium is just too hot for my family. Update: I found some mild herdez' verde on amazon!!! They didn't have it before. Expensive there.
Could you please name (speak) the ingredients in the grocery run, so we know the ingredients' names, brands or alternatives, and size or amount? -- I'm vision-impaired, so until you named them when in the kitchen, I could only guess what you were getting from the store shelves. :) This recipe looks easy; I'd just need some more in my pantry and freezer. Personally, I go for mild heat, no tán caliente. I'm Texan, so I may have an average heat/spicy tolerance, while my mom and great-grandmother were chili-heads, basically. :D -- One thing: during the pandemic lockdown and still after, I was dependent on friends or things like Amazon, with my local grocery stores' websites often out of stock and Amazon often out too. I can get most ingredients from my local store, but some from Amazon, while Amazon is weird about whether it has anything from common cooking things everyone uses, to specific Latino or other regional ingredients. I don't get that; they want to sell everything on the planet, so why are some things not available, even usual national brands, and definitely ethnic specialties. But even now, my local store's website is iffy about several things that ordinarily, they would keep in the store, and thankfully, they have a pretty good selection of things for Mexican / Latino and a few other cuisines because my city is so diverse, so many people from all over the planet. So when any of these are out of stock or show unavailable, it's really annoying. -- I am way too new at home-cooking and having recipes for Mexican and Latino food, even Tex-Mex, because I used to be able to go out more easily and get it from local restaurants. Now I keep finding I need some good home-cooked or locally-prepared restaurant food. Again, Texan, so I grew up with things, but I'm Anglo, so I don't know as much as I think I know about it, haha! Love your channel. You do a great job of explaining and showing things, and it's easy to do; I will be trying out things as I go.
La Costena makes the best store bought green salsa! Not that others are bad, but they aren't as good as La Costena in my opinion. I use it to make spinach and mushroom enchiladas for my husband's breakfast. We also prefer Verole crema, but I think that's more of a Mexican sour cream than a table cream. You have inspired me so much with your videos! You make everything look so easy. I appreciate you making them.
I personally am not a fan of Herdez brand...to me it seems to lack the tomatillo tang. To me that tang adds a ton to the final dish. Other brands have more tang!
I CHEATED !! I make my Verde w end of season GREEN TOMATOES.. everyone loves my Verde and they don't knowww I couldn't afford the real Tomatillos... they think I'm RICH !!!😳 but I'm not. Muuuwahahahaha !!!.. im creative, I get it from my mother. 😉👌
So cool. I thought they had to be baked after assembly. Maybe that's why mine always turn out soggy. I gave up on enchiladas years ago, but I'll give this recipe a try.
I've typically seen enchilada recipes call for baking, but I also don't see any reason not to do it her way, just assemble with the ingredients freshly cooked. If your enchiladas turn out soggy, maybe less liquid or take any cover off for a longer part of the baking time, or bake less? -- I've only tried making enchiladas at home once. I had too much sauce (from a store-bought brand) and it was too hot/spicy (caliente) for me, and should not have been. But it seemed doable!
So when doing your enchiladas, be sure that you don’t over warm your tortillas or add to much sauce.. when baking it’s to warm up and melt the cheese only.. when buying your tortillas be sure it doesn’t say extra soft ! Don’t give up just try my way mixed with her way and your way will be amazing!!! I personally like the el Pato enchilada sauce in the can , but it’s to your liking and what’s available. I also like to use a Mexican blend of shredded cheese inside enchiladas with chicken and on top after smothering with sauce. Don’t bake over 10min on 350.. let cool for 4-5 min before serving 👏🏼🇲🇽❤️😊

Oh my goodness... I have this on my menu this week, but instead of chicken I'm gonna chunk up a pork loin and sear, then put salsa Verde over it with a little chicken broth... Simmer for couple hrs.. Then shred and stir and have Pork salsa Verde tacos with fresh tortillas and rice of course😍 Thank you Angelica for your everyday use of easy ingredients and making it taste amazing!
