Ingredients
Zucchini - 2 pcs
Onion - 2 pcs
Carrots - 3 pcs
Potatoes - 2 pcs
Green garlic - 2 cloves
Water - 6 tea cups (1.5 l)
Olive oil - 2 tablespoons (20 ml)
Black pepper - 1/2 teaspoon
Oregano - 1/2 teaspoon
Parsley
Salt - 1 teaspoon
For the croutons
Bread - 4 slices
Butter - 20 grams
Olive oil 1 tablespoon (10 ml)
Salt - 1/4 teaspoon
Oregano - 1/4 teaspoon
Paprika - 1/4 teaspoon
Method of preparation
Cut the onion, carrots, green garlic and potatoes. We stew them for 10 minutes on a moderate heat in the heated olive oil or oil. We salt.
Cut the courgettes and add them to the rest of the vegetables.
Add 1.5 liters of hot water. Boil for 20 minutes on a moderate heat.
Season the soup with black pepper and oregano. After turning off the heat, puree the soup using a blender. Sprinkle with parsley.
While the soup is cooking, prepare the croutons. Cut the slices of bread into small cubes. Heat the butter with olive oil, add the bread, salt and sprinkle with black pepper. Roast for 3 minutes on a high heat. Add the red pepper and cook for another 1 minute.
