There are many ways of fixing a burger, and I'm sure many are delicious, but this JALAPEÑO ONION BURGER takes the prize. You can't have a burger without onions, you just can't! they belong together, they were made for each other. I use 4 ounces of 80/20 ground Chuck per burger, and I use my electric griddle set on 325°-350° there's no need to abuse them with anything hotter. You don't want to skimp on your thinly sliced onions because they will cook down once you flip them over, and they are the star of the show in this recipe. I am proud to say that here in the Rio Grande Valley south Texas we are famous for our 1015 Texas sweet onions, and it doesn't get better than that. I place my patties on the hot griddle then top them with a handful of finely sliced onions, and cook them for about 2-3 minutes, then I flip them over and top the patties with a slice of Colby Jack Cheese and cook them an additional 2-3 minutes or till cooked to your liking making sure to get your onions caramelized to perfection. I like to let my patties sit for a couple of minutes before I top them with my favorite ketchup, mustard, dill relish and a nice squeeze of pickled jalapeño.❤
