My Favorite Winter Comfort Meal | Nilaga | Filipino Pot Au Feu

Recipe:
Nilaga
3-5lbs stewing beef w/ bone (shank, oxtail or short rib)
1 onion, cut in half and outer layer removed
3-4 1in pieces of ginger, peeled
1 bunch of carrots, peeled and trimmed
2 ears of corn cut into thirds
1-2lbs potatoes
1 head of cabbage cut into eighths
1Tbs whole pepper corns
salt to taste
Dippin Sauce
3Tbs Soy Sauce
3Tbs Lemon Juice
1. First boil, cover meat with water and bring to a boil for 8 minutes
2. Toss first boil and rinse each piece of meat thoroughly
3. Second boil, cover meat with water. Add in onion, ginger, salt and whole pepper corns.
4. Bring Nilaga to a boil, once it hits a boil drop the flame down to low.
5. Gently simmer the meat for 2-3 hours
6. As meat starts to go soft add in whole potatoes and cook for another 20-30 minutes
7. Once the beef is done braising and the potatoes are soft, take everything out.
8. Bring stock back to a boil then add in reaming vegetables; corn, carrots and cabbage. Cook for 15 minutes
9. For the dipping sauce combine soy sauce and fresh lemon juice 1:1
10. Serve Nilaga with dipping sauce, rice and a mug of extra broth

I had no idea you were filipino! Love this and it also transported me back to my childhood dinners. Your Lola's version of nilaga looks so healthy and easy to make! would love to see her take on other traditional dishes. Great work dude!

Growing up I loved eating my mother’s Lumpia, Pancit (especially during birthdays), Mechado, and other Filipino dishes. But recently, Beef Nilaga has been hitting that nostalgia that her other dishes haven’t for a while. Nilaga was always a dish I had when I was sick and eating it as an adult, I am always taken back to the times when my parents were there when I needed them the most. Loved this video.

Your dish looks incredible! I am definitely trying this out. Maybe I’ll be able to add it to my list of comfort foods, too. I would love to see more recipes from you. If all cooking shows were like this, I think I’d have no problem sitting and watching for hours. Your video style is addicting, as always. You’re one of the few RU-vidrs I will seek out if I want to watch something.

Thanks for the recipe and video! I love how different cultures can connect over food. I'm from Argentina and we call this dish "Puchero" and I'm guessing it all boils down (heh) to Spanish influence in both our countries. We don't add ginger (not a local ingredient) and ours include sweet potato and sometimes squash. We also fight over the bone marrow! Best part of the dish hands down.

Beef shank is a great CHEAP cut full of flavor. I pick this for my beef stew and the bone marrow enhances the thick stew texture in my opinion. It can be had for

My concern is that the meat will dry out, so do you add some of the broth to the meat before cooking the veg? Nice video by the way.

Nice. But with the ginger, this is more of a Tinola than a Nilaga. Traditional Nilaga doesn’t have ginger. At least the ones in Tagaytay bulaluhans.
