Happy birthday, Tah. What makes the food pleasurable and enjoyable to eat is that the family poured all their love into every meal they cook from preparation to eating. It's the secret ingredient. The friendly interaction when eating makes the party more enjoyable and, for you, the discovery of what is similar or different between the dishes of the two countries. There are still more dishes to taste. The best time to get exposed to different dishes is during fiesta season. Let them tell you about it. The practice is when a town holds a fiesta, you go from one house to another and try their food, and the family's specialty at times. You have to visit each house especially those who invited you before the fiesta otherwise they would feel bad about you not visiting their house. You have to prepare yourself like eating less or go fasting before you go to a fiesta so you could eat a little bit of this and a little bit of that. Don't eat a plateful of different dishes because you still have other houses to visit. lol. After the town finished their fiesta, the next town celebrates theirs. And so you venture out to the next town and so on. lol. Nowadays, preparations are not that extravagant because everything is expensive but every house in every town try to offer you the best of what they've got. Of course, there are town games and concerts during the day and dances at night where everybody particularly the young ladies and gents get to dance on the dirt road or an a gym while the old folks dance to their old tunes in other places. This is the Filipino way of celebrating life, good harvest/business despite the storms and everyone is in good health, as well as thanking God above for the blessings. Filipinos work hard but we don't forget to smile and celebrate on each new day despite all the bad things that are happening. Collect these happy memories as you can think of them to lift your spirits up, like a lot of my countrymen, when you feel down.
