Yes, ideally. But if it's at its peak and, say, you can't wait till it starts falling because you need to leave the house/go to bed, etc., it's OK to feed it at its peak too.
Hello. When taking starter out of the fridge to make bread, do you feed it again then let it rise on kitchen bench then make your bread or can you use starter straight away to make bread.?
I usually take it out in the evening and let it sit on the counter to bring to room temperature. By morning, it usually rises quite a bit more. Then I measure some out to make bread, and feed the rest. So, to answer your question, I don't feed it before making bread.

I have seen many RU-vid videos and found yours to make a lot of sense and explained the water ratio with different types of flour. I believe that is where I was failing. I’m so happy that I have stumbled on your channel. Will be watching. Cheers.
