I have a lot of stuff to get done on the homestead today. My pantry is a bit of a mess after the holiday's, and I have a lot of new things I need to put away as well. However, one my main goals today was to grind up some Spring Wheat berries and try to make some bread with them to see if it comes out the same as Winter Wheat berries. We'll also whip up some chicken broth with what I find in the freezer, and I'll share a bunch of miscellaneous pantry tips along the way as well. Joins me for an entire day on the Homestead ♥

You have inspired me to start my first vegetable garden this year. I didn’t think it would have been worth the effort because my husband and I are empty nesters. Most of the homestead videos show large families. Your video proves that a family of two can enjoy the pleasure of homesteading. Thanks for the inspiration!

My rolling pin was a wedding present for my Mom in 1946. It passed to me and I don't wash it. It's a treasure!

Mine has no provenance like yours, but it is probably from the 1940s-50s and I love it. I just wipe mine off and then dry it.

Beautiful bread! It’s still on my To-Do list. Maybe this will be the year. I just had a memory… I taught my mother-in-law to quilt when she was 64 years old. We quilted a baby quilt for our new baby, my son Chris. I guess the reason I thought about it is I’m 64 years old, just shy of 65 and I would love to be able to make bread. 🍞 you’re never too old to learn something new. 🥰🙏🏻

Rachel, I noticed you store your canning jars right side up. I’ve begun storing my jars upside down-it doesn’t make a huge difference but I like knowing the jars aren’t collecting dust in storage. Thanks for the video!

I put old lids and rings on my clean jars for storage. It keeps them clean, easier to start a canning project. I store my jars in a shed or garage shelves, so the lids keeps the stink bugs out.

I just started milling my own flour as well- I went straight to using the whole wheat- no sifting, using all of the home milled flour. I have made pound cake, muffins, waffles, bread and they have all turned out wonderful. I get a lot of recipes from Grains in Small Places on youtube- her recipes are excellent.

I have been making 100% fresh ground whole wheat bread for almost 20 years. I use five cups of hard red wheat flour and enough hard white wheat flour to clean the bowl of my Bosch mixer. That makes six loaves. I was telling a new acquaintance that I sell it. She insisted she would need white bread. After her friend tried my whole wheat bread and told her it was good she asked me for a loaf of it. She texted me after trying it and told me she liked it. Score one convert! Happy bread making! And happy "hopefully snow." They're forecasting 7-10 inches Monday night and Tuesday where we are in eastern Iowa. I'll try to send it your way when we're done with it.

When putting away the empty canning jars, store them upside down. It keeps dust from getting in them and especially protects the rims from chips that might happen from bumping etc.

Speaking of using garlic scapes in chicken broth, one can use the leaves for that purpose as well. Freeze the green leaves when you harvest the garlic.

Great advice about off season canning supply stock up! My Grandmother used to throw 1-2 packages of canning lids into her cart every shopping trip. It spread the cost out and she always had what she needed. When 2020 happened and lids were nowhere to be found I had a huge stash because of what Grandma taught me:)

We just went off all processed white flour and switched over to grinding our own flour. I find a combination of hard red wheat and hard white wheat makes excellent bread and soft white wheat is great for pastries, cakes, cookies, etc.

I agree with saving jars. My husband raises bees and we’re always giving some honey to friends and don’t want to give away my mason jars. My mother always saved cute jars and it drove me crazy, but now I do the same thing 😳 I grind my wheat berries and keep a bunch in the freezer so that I don’t have to grind wheat every week.

Dont worry Rachel, I don't put away my toys either. You had a video where you had a bunch of empty jars on the counter. I was like "See! Its normal, I'm not the only one!" I felt better about my lack of putting my jars away. 😂

I used my leftover jars, like your maraschino cherry jars, to make a homemade dry pork and chicken rub for the guys in my family for Christmas. They all love to grill and use their smokers. They thought it was a great gift.

You absolutely can make soft and fluffy bread from 100% freshly milled whole wheat (no sifting!), as good or better than using white flour. The bread beckers basic bread recipe is a good place to start. My own recipe is a heavily modified version of that recipe. Over the years I’ve been doing this I’ve moved over to using a higher and higher percentage of hard red wheat than hard white, specifically wheat Montana’s bronze chief which is a hard red spring wheat. The gluten formation with hard red spring has been better for me than hard red winter wheat, but wheat quality does vary by the year.

When I use fresh ground wheat, I add a teaspoon more yeast and a little more honey. Then you get a faster rise.

I save my leftover glass jars too. I use them for sourdough discard mostly but I also use them for freeze dried fruits.

I've watched you for awhile. Sure wish I had your pantry(basement space). That's my envy talking. For many years I've used a mix of whole grain flour & white, unbleached all purpose flour to make our bread. I grind a blend of spelt, einkorn & white wheat. Makes wonderful flour. Because of my husband's low salt diet I make all our bread, buns, etc. I use a little less salt than recipe. My daughter & grandsons live with us so I make the blended bread instead of total whole grain-so they'll eat it. Now most of the time I make sourdough with the same flour blend. Also comes out great. I also make a biscuit/pancake mix with the flour mixture & store in freezer. I use Sonora Soft white wheat berries for pastry flour.

Regarding your oven…our gas oven quit lighting, so I googled possible causes. The igniter came up as a common cause. A RU-vid video showed how to replace it. Paid $25 for the part at the local appliance parts dealer and replaced it myself, with the help of husband and neighbor who provided the muscle to pull the stove out! Check it out!

I'm new to milling my own berries but from what I understand winter and spring is only when it's grown. Red berries is wheat flour and white berries is white flour. Soft white is for cakes, muffin, pancakes etc.. If new I would stay away from the other grains as they involve more nuisance then standard and can be hard to adapt to for someone new to milling and can get overwhelming. I loved this day in the life vid.

Also, I’ve found erythriyol is my cup for cup exchange for sugar, also, real salt is great but it has no iodine in it, which we as a society depend on Morton’s iodized salt, as our source, I use 2drops a day of j.crow Lugols iodine 2%. My daughter began using it as well, and six months later her breast cysts disappeared. Apparently it’s a thing!

I started grinding my own grains in 2022.......I use Sue Becker's bread recipe exactly and do not add any of the optional items. I use an Ankasrum mixer and the real trick is to NOT be tempted to add more flour (I measure and grind 3 cups only). It's sticky-ish for a while but I end up kneading it in the Ank for 25 minutes and it turns out perfect. Light, soft and so tasty! I use all hard red wheat too.

Oh I’m so glad I saw this comment. I use a kitchen aid and I’ve never felt like the 5-6 mins was enough and I thought maybe it was just my mixer. You are so right though you have to resist adding more flour!

We dont keep milk either and I use to do the evaporated milk but not I do the dry milk and I love it. It tastes the same as the evaporated milk and I can make as much as I need and yes you can get whole dried milk. Give it a shot youll love it. Your pantry is my life goals lol. I showed my husband and he was like ok lets move lol

Hi Rachel, I have done SOME baking and grinding my own wheat flour from different types of berries. I've used red and white wheat berries, and I think the difference is that white spring wheat makes a lighter whole wheat flour. I know you can buy it as white whole wheat in the store, and when I used to just buy my flour for bread, that's what I bought, for its flavor. Nutty, but not too heavy, even without sifting out the bran or any of the fiber at all! It's kind of become my favorite. I also really like oat groats for oat bran bread, I mix it with maybe 1/3 white wheat and 1/3 all purpose flour, or you could do 1/4 your amount of flour in ground oat groats, 1/4 the amount in white wheat, and 1/2 the amount in all purpose flour, and you still have a good amount of whole grain in your bread. And it's SO good. I like to brush the top of mine with some melted butter when it comes out of the oven, and the top will stay soft, but I realize that wouldn't work, storing in your cool pre-Tupperware bread container. So cool! I also really like your longer bread pan, and I'm hoping that might be on Amazon or Ebay. Thank you for this video, it's so nice to know that your working space is well used, and your pantry looks like mine! You just use your space, and work in it, and I get that.🌻

I love baking fresh ground whole wheat bread. We do fully whole wheat now, and it has such a depth of flavor. I use about 2/3 hard red to 1/3 hard white in my loaves.

You had a very productive day! I have been milling our flour since the 90s. Key to remember grains; Soft wheat- non yeast cooking and baking Hard wheat - yeast baking Red wheat grain has a nuttier and a bit bolder taste. White wheat grain has a lighter flavor and I like it better for sandwich bread. You can use ½ red, ½ white and it does very well in bread recipes. It seems that red wheat flour takes longer to rise for me.

I’ve always used hard white wheat berries to make all my breads.that’s what was recommended to use for bread making. Don’t think I’ve ever used hard red wheat berries. It is super delicious too!

YES! I am also a jar hoarder 😂 They are great for when you have a little bit of leftover from jams & jelly canning. Just stick them in the fridge. Or, sending things home with your adult children, knowing you may never see that container again.

The difference between winter wheat and spring wheat is when it’s planted and winter wheat is a hard wheat which contains gluten that is needed for making bread. Spring wheat is a soft wheat with little to no gluten. Good for cakes and quick breads.

I have just started grinding my own grains for flour. I found a few channels on RU-vid to be very helpful. Grains and Grits, The Rose Homestead are my favorite. The Essential Home-Ground Flour book by Sue Becker is wonderful. She has videos on RU-vid also that has tons off info on. She explains why grinding your own flour is so healthy for you.

When I have a nice leftover candle jar with a lid, I clean it out and fill it with tealights with matches and a lighter. Makes for fantastic "emergency candle" kits to have around the house and give as gifts.

I have a kitchen stove like yours and experienced similar problems. After watching you tube, found out it was the igniter. Ordered one from Amazon and replaced, works fine now. Also watched Tods video on catching nusance critters; we have moles in every part of our yard. I ordered the traps he recommended and we are so pleased, they are the only thing that has really worked. Thank you.

I use old jars as well, like your cherry jar, I use them a lot for any kind of cooking drippings I intend to trash. I keep one in the fridge, and layer it up of what I want to toss after dinner, sauces, fats, etc, when the jar is full, it goes out in trash day…the fats in it have hardened up. Also, gamma lids are totally worth the cost.

I was gifted a vintage electric grain mill and I am eager to try my hand at making fresh flour. Our new range oven has a bread proofing setting so I am hoping to try out growing my own sourdough, too!

Container freaks unite!!! I am the same, saving glass jars, sometimes even buying an item over a comparable one because of the jar. 😅 But in my defense I do use them in the kitchen and for crafting too.

I have a tip for you when putting your jars away place a new lid and ring on them that way you keep junk out of the clean jars and you know you have rings for those jars. I do that to keep rings put away and it just makes it easier and faster for me when I'm going to can. I know the jars are ready to go

Lots of sourdough going on in my house. I use a mix of 1 to 3 for wheat/white flour. I gotta say I just love the pullmans loaf pan! I just ordered a new refrigerator it is done and our stove is also in need of replacing, I started two fires so far. Yikes. lol

I bake with only fresh milled grains. I see a difference in the red vs the white in hard wheat but not spring vs winter. I find the hard white to make a fluffier loaf than the hard red. But I love the depth of flavor of the hard red, so I mix 2\3rds hard red to 1\3 hard white.

Just a little info because you have taught me so much...I taught ethnobotany to some junior high kids. I wanted them to understand what life was like not long ago. So we watched Pa on Little House on the Prairie struggle to grow wheat, and then, I showed them how much wheat you had to plant to bake a loaf of bread. It was a meter by meter (methinks, trying to remember) piece of paper with dots every 1" to help them see how many seeds you must plant and grow to harvest for one loaf of bread. Of course, then you had to save enough seeds to grow another loaf. Multiply that by 365 and... that's a lot of seed/loaves

My rolling pin gets wiped off with a damp cloth if it is real sticky or dirty because it gets the drawer dirty, but otherwise never totally washed. All that goodness stays with it and seasons it for next time. 😊

I received my Grandmother's rolling pin when she died. She never washed hers either, just wiped it off with her floury hands & slid it into an old bread bag to store in the drawer. She had an old folded up tea towel, never washed, in there too that she worked her dough on instead of the counter.

Those jar boxes are GOLD! They are really good for putting your jars of stuff on wire shelves too. Sometimes the jars want to fall off because of the gaps in the wire. FYI GMO wheat is not available to purchase...so all the wheat flour you buy is non GMO. I don't wash my rolling pin either LOL Oh my gosh! I laughed so hard at "the benefit" of your bread container. Good for you Rachel ! LOL

I think most of us tend to leave our toys out. I need a 2nd kitchen for just food preservation. Great tip on stocking up on supplies in the off season.

This is probably going to upset some people, but I water bath can with reused glass jars (and their lids), like those maraschino cherry jars. One of the reasons is that it's not very easy (and crazy expensive) to buy the classic jars with two-part lids here. Works fine.

Can relate. I have a kitchen table full of jars that I still need to wash and put away from November. However, in my defense, I’ve had major stomach surgery between here and there and I am still recovering decided to can a lot before surgery so my kids would have food ready to go just never put them away. Lol.

I just looked it up. In 2017 it cost $1.00 for one loaf of whole wheat bread. That healthy tasty chicken is almost free.

I’m on my fresh milled flour journey and I took a class from Sue Becker and my loaves turn out great!! There’s many great resources for 100% fresh milled bread. Sue Becker from Bread Beckers, Grains in small places, Grains & Grit and Michal Grappe!

Really, really new to making homemade bread from scratch, I have always wanted to use the dough cycle on my bread machine to mix the bread dough but was never sure what to do afterwards. I love that you rolled it out flat and rolled it up to make a denser loaf and I really want one of those "boxes" you cooked it in!! Love this!!

Love this video! I started milling my own wheat about 4 months ago and it’s really made a difference for my husband who has stomach issues. I have the WonderMill too and love it. Would love to see more Fresh Milled wheat videos.❤️

My mom alway stored her jars upside down and grandparents and mother-in-law and her family did the same ! They said they didn’t get chipped or stuff (mice and bugs) fell in them ! Make sense to me especially under those steps

I have to say I think thathia the worst place ever to out your empty jars. Everytine you go up and down the atairs dust and dirt is getting on them. Bare minimum turn them upside down. When I put my washed jars away I actually either put them in a container tub that is shallow with a lid that holds a bunch of them and if I don’t have them i put clear plastic bags in them and out them in a box. The roll of bags are Cheap. I do this just in case the pow😂r goes out and I have to can the contents of our freezer quickly. I won’t have time to wash jars because I will need to hustle before the food spoils. Just a tip! Love your channel! Maybe you could at least throw a clean sheet over them or put the case in a garbage bag.
