My Italian mother's eggplant recipe that has conquered the world! Incredibly tasty and filling.
Hello everyone! Today I am introducing you to a very tasty and easy to prepare recipe. Eggplant flan with eggs, mushrooms and peppers is an extremely tasty, healthy and filling dish. You can make it for breakfast, lunch or dinner and your family will love it! For this delicacy you only need a few simple ingredients. I assure you that everyone will like this way of preparing eggplant! Try this easy eggplant flan recipe with eggs, mushrooms and peppers and let me know what you think in the comments!
Ingredients:
- 3 eggplants
- 1 onion
- 1 red pepper
- 4 mushrooms
- 1 clove of garlic
- Salt to taste
- Black pepper to taste
- oil for frying
- 3 eggs
- 100 ml milk
- 150g flour
- 100 g of cheese
- Butter
- Breadcrumbs
Preparation:
1. Cut the eggplants into slices, sprinkle salt over them and let them stand for 15 minutes.
2. Pat the aubergines dry with a kitchen paper towel and cut them into cubes.
3. Cut the onion, red pepper, mushrooms and garlic. Remove the seeds from the pepper and cut them into cubes too.
4. Fry the onion, peppers, mushrooms and garlic in a pan with oil until soft.
5. Add the eggplant cubes and continue frying until everything is cooked through. Season with salt and pepper to taste.
6. In a bowl, whisk the eggs, add milk, flour, salt and black pepper and mix well.
7. Grate the cheese.
8. Mix the fried vegetables with the egg-milk mixture and half of the grated cheese.
9. Grease a baking dish with butter and sprinkle with breadcrumbs.
10. Pour the mixture into the mold and sprinkle with the remaining cheese.
11. Bake the casserole in a preheated oven at 190°C (375°F) for 40 minutes until golden brown.
