Its so cold here now...winter is approaching, but Im happy about it...
Today I wanted to share with you a little bit of my own personal journey towards a more simple life, why it was important to me and how this new mindset has changed my life for the better. I hope that you enjoy this video.

For the pear crumble:
(I make it vegan)
Filling:
-3 or 4 medium sized pears, chopped
-2 tsp cinnamon
-1/2 tsp nutmeg
-2 tsp vanilla extract
-bit of oil for cooking (I like to use coconut)
For crumble:
-170g plain flour
-100g caster sugar
-100g non dairy butter
-80g rolled oats
Method:
1)Put the pears and other 'filling' ingredients into a pan and cook them on a low - medium heat until pears are relatively soft. Meanwhile, make the crumble mixture.
2)Put all crumble components into a bowl and mix with your hands until it makes a bread cumb texture.
3)Pre heat and oven to 190 C /gas mark 5 and grease a baking tin.
Pour the pear mixture into the tin and then cover all over with the flour mixture making sure its an even layer over the pears.
Bake for approximately 35 - 40 mins or until the top of the crumble is golden and enjoy! I like it with a bit of vegan custard! :)
