Safe travels home, Max. Hope you enjoy quality time with family and friends. That meal looks amazing, but I'd just eat the braised pork belly with pickled mustard greens all day. I LOVE that dish! Lemongrass chicken or any caramelized/braised chicken like that is great (including the ginger chicken version)...it's what we'd eat growing up as a daily home meal of sorts.

Do a food tour or two or three when in Hanoi (using different guides/companies), especially if you're not familiar with Vietnamese food. They've got amazing food tour guides there. Check out the videos from "Adventures of A+K", "Sammy and Tommy", "Flora and Note" (this one is more funny than anything else, but the guide was great), "This Food Bangz", "MomDuty", and "Mike & Ashley".
