Today I'm showing you guys my current SCA steak recipe! Feel free to use it if you want to get started in SCA competition or use the tips and tricks to improve your current game. SCA requires a lot of extra effort in the form of trimming, marinating, brining, seasoning, tying, staking, searing, etc. It's very involved but it's also very fun and you have a chance to win money!

I’ve pulled steaks at 140* that were way more pink than that.I’d check that temp gauge

I'm signed up for a SCA judging class, I hope to compete this year. I'm shocked at how much seasoning seem to be on winning steaks. Mine typically use Kosher salt an hour before cooking and that's it. Sometimes a compound butter before serving.

I've yet to nail down a perfect recipe but yes the SCA steaks have a tonnnnn of prep and seasoning!

Not a bad starting spot. Looks like a steak I’d enjoy eating! But from what I can tell, steaks that you’d want to eat don’t score well. You have to make it all about that one bite- even if it means that’s all of the steak you’d want to eat. That makes it tough. I know some folks have the same approach to BBQ but my comp BBQ is the same you’d eat if you came to the house. And it seems to do well in both places.

2 things... 1) the camera is over here. 2) have you tried putting some cream on your upper lip and having your cat lick it off? Saves on shaving expenses when you have that kind of pre-pube 'stache. But seriously, good starting point for SCA beginners, especially the skewers and string trick.
