This is a rough and ready video of some aspects of my homemade shock dyno. A device for measuring the damping characteristics of motorcycle shock absorbers.
The differences in the data between using a position sensor and an LVT (Linear Velocity Transducer) for position and velocity data is highlighted. Unfortunately the sound is not good. It disappears in some places. The following links cover this aspect in clearer detail.

Always enjoy on of your videos. I really must put my dyno back together, it was only lashed up temporarily and the plots traced with the X,Y function of the digital scope. The sound was breaking up at some points and there were a couple of silent sections that it wasn't clear if they were intentional or not.

I think of POTs as ridiculously inaccurate. couldn't you replace all your sensors with a rotary encoder like the one you put on your lathe? Run the string over a small pulley on the shaft of the encoder and calculate acceleration etc in the MCU.

Resistive sensors have been long used on professional damper dynos and indeed for live travel measurement on track. I've obtained very clean readings (in a different application) from pots with conductive plastic tracks. Metal film, or Carbon, not so much.

Paul Compton pointed out that using pots for displacement measurement is a well accepted practice. As far as I am concerned the problem with any displacement sensor is when you differentiate the displacement to get velocity. Increased velocity noise cannot be avoided, it is fundamental to the differentiation of digital signals. Whereas using a velocity sensor the velocity gets integrated to get position and that operation reduces displacement noise. Unfortunately, the sound on the video was very bad during those explanations. I only use a displacement sensor when using extremely slow velocities to investigate stiction and friction. All other tests are done using an LVT.
