My take on: Frango à Zambeziana
I am not a chef but decided to try to make a dish from home which I really enjoy. This a typical Mozambican dish which is widely enjoyed in many Mozambican households.

1H to 1:30H to prepare
Ingredients:
Chicken (6 thighs)
(1 can of)Coconut milk
2 lemons
5 garlic cloves
Red chillies
Olive oil
Coconut oil
Salt
Pepper
Dried chilled (optional)
Bay leaves (optional)
1. Season the chicken wit salt, pepper, juice of 2 lemons and 4 grated garlic cloves (Optional: leave for 2 hours as to absorb better)
2. Place in a baking tray and place in the oven for +- 35 minutes at 200°C
3. In a small pan, add 2 table spoons of oil (olive/coconut) and 1 finely chopped garlic. Let is get a bit brown and add chopped red chillies. When the chillies soften add the can of the coconut milk. Let it boil and simmer. Finally add lemon. Add salt and chilly to taste.
4. Remove the chicken - the skin should be crispy and the season should have decreased- and pour the coconut sauce on top. Put back in the over for 20 minutes at 170°.
Best served with basmati rice or potatoes and a simple salad.
