NAGARJUNA ANDHRA STYLE CHICKEN BIRYANI I EASY RESTAURANT STYLE BIRYANI

Tips to cook the rice and chicken perfectly:
There are couple of things you got to keep in mind 1st raw material, 2nd type of stove you are using electric or gas and 3rd measurements.
If the above three are followed you should be able to achieve the same taste and texture every time you cook as shown in the video.
First raw material:
2 main ingredients are chicken and rice. I usually buy meat from licious, it is little expensive but its worth the price we pay, you can go for medium cuts or curry cut anything works fine. 2nd - rice i used was India Gate, in comparison with other brands that i have used i can say this works for me.
Note: these are not sponsored, just sharing what i used and what gave me the result.
Second is stove:
I have used a gas stove for cooking i am not sure if the results can vary or cooking time can vary in electric or induction, i have never used one before. So this could be one of the factor, if you do not get the same result.
Last is measurement:
The main reason for highlighting this is, while cooking rice especially when we do this dum method, you might land up either under cooking or overcooking!
So in order to correct that, make sure the rice and water are measured in the same cup.
In general 1:2 is the ratio, for one glass rice, 2 glasses of water is what i would use.
But for this basmati rice after soaking for 30 minutes approx 1:1.75 is sufficient to cook perfectly. I.e. for 1 glass of rice 1.75 glasses of water is more than sufficient. In gas and ML, for 100 gms of rice 175 ml of water would be sufficient.
Cooking Tips:
Ensure chicken is only 80% cooked while adding water and rice, if chicken is already cooked then they will be overcooked while cooking the rice.
Keep the flame to medium high until you put on dum.
Once you add coconut milk and water, wait until it starts to boil and then add the rice.
Once rice is added dont keep stiring, just mix once and leave it, or grains will break. You can close lid once you see the rice bubbling and keep checking until its 80% cooked.
Once you know it's 80% cooked you can lower the flame completely and keep a dosa pan under neath your vessel for dum. 10 to 12 mins should be sufficient to get the perfect texture.
Cooking using pressure cooker:
You can still achieve the same results in a pressure cooker, once the water and rice is added, close lid and pressure cook for 3 whistles and allow the pressure to cool down.
Do not open the cooker lid unless the pressure is completely settled, it can be very dangerous. You can check by lifting the whistle slightly, if there is still pressure releasing, thats the indication its still not settled.
Depending on the cooker size it might take 7-10 mins for it to cool down.
You can open the lid after this and transfer the rice to another wider bowl to prevent them from further cooking. Give a quick mix using the rear end of your spatula or any spoon and just mix and spread rice in bowl so that, steam can pass through.
Pro tip:
If in doubt add water little less, even if rice is under cooked you can add hot water and close lid and cook the rice to desired texture.
We cannot do the same other way it is a difficult task if overcooked.

We tried it for lunch today and the biryani was fantastic. 😋 We all loved it. Initially I was sceptical to try it as the colour of the end product was not so attractive and felt it would be very mild. But hubby highly recommended it as he personally tried this style biryani from Andhra. The biryani was exceptionally good with optimal spice level and masalas. Thank you for the recipe 😊

Thanks for this recipe, tried this out at home and can confirm that it tastes about 90% like Nagarjuna Biryani. The only difference can be attributed to the quality and variety of rice used. It is important to follow the recipe exactly as shown here

Nice to see a Nagarjuna recipe. Thanks! What garam masala powder did you use for the recipe, if it is your own then can you kindly share the ingredients and proportions please. Also I’ve never used coconut milk in Biriyani, I can see it how it adds to the taste.

Hi, thanks for this recipe, cant wait to try it. However, I’m not supposed to eat chillies for health reasons, so what is the minimum amount of green chillies required for flavour but not heat? Think for foreigner level heat tolerance. Thanks again!

Hi thanks for ur interest.. You can reduce the numbers by 50% to what I have described.. Or you can buy the ones which are not too hot and keep the same number.. It depends on chillis what you find in your place... The ones I used in my recipe is medium heat ones.. So overall I would advice you to add maybe 5 green chilli which are medium heat..hope it helps..

Hi its universal measurement.. 1 cup which I use.. Its approx 235 ml or 125-130 gms.. You find these regular measurement cups in IKEA or amazon.. Its standard..

Thanks for the recipe. Tried it & while the flavor was on point, as a novice cook, I struggled with the texture - the rice & chicken ended up overcooked. It would be super helpful if you included the level of heat & approximate duration for each step.

The process remains same overall but you might have to cook the mutton to 60% after the marination of 2 hours.. You can then add the cooked mutton at the same stage, just like how u prepared with chicken. If there is stock left over use it while adding water just make sure u reduce water accordingly.

Really not sure in this style if you can make with paneer, you might have to do dum biryani style. Paneer is too soft it might crumble while cooking with so much water and rice.

You can but you won't get the restaurant taste.. Just replace water instead of coconut milk.. But for best taste try using coconut milk..

Nope u need to replace that one glass of coconut milk with water so that the rice can cook.. Ghee is optional if you require , u can add a little before putting it on dum..

Hi thx for watching the video.. Yes for this style its kind of important..won't say mandatory.. Coconut milk is what gives texture flavor and taste that is particular to this style.. U can replace it with water if u don't have coconut milk.. But taste might slightly differ! Hope this helps!

Usual measurement is 1kg rice = 1kg meat be it chicken or mutton, rest of the ingredients just double them all. You will get the same taste and consistency. I have done it myself and it won't go wrong! Happy cooking 🙂

@@djv2585 Adding tomatoes after meat is half cooked helps it cook faster as sometimes because of tangy taste it can slow the process.

Hi its okay...but u might not achieve the same flavour and taste.. Just replace that with water..

Honestly i do not know as i haven't cooked this particular biryani without coconut milk, it would definitely give u good results cos most of the biriyani do not use it. It would taste like any andhra biriyani.

The missing secret ingredient is PINEAPPLE. Don't know how to use it or when to add but I've observed they use pineapple. I've got pineapple pieces in my biryani many times in Nagarjuna

Chicken was already cooked 80% so it will be no taste coz of the water u have poured and added rice to it

Hi thanks for watching.. The chicken has already absorbed all the masala.. and especially with curd added to it makes it even more tender and soft when its done.. The chicken pieces will still have all the flavors while the biriyani is cooked..

Made it yesterday and it came out superb! Appreciated by everyone:) Chicken was cooked perfect , taste was well balanced and on the whole a huge hit :) It would be great if you posted an Andhra style chilli chicken recipe as well :)
