Nailed It! Cream Soda Recipe Version #2

Ingredients:
2L water
650g sugar
100g lactose
5g cacao nibs
1g (¼ tsp) citric acid
Pinch of salt
100 mL pure vanilla extract
Method:
Heat the water until almost boiling.
In a large jug; mix sugar, lactose, cacao, citric acid, and salt.
Stir the hot water into the sugar mixture, until sugar dissolves.
Cover and set aside to cool.
Once cool, strain out the cacao and mix in the vanilla.
A good starting place seems to be 1 part syrup mixed with 2 parts soda water.

What I mostly like with this channel is the personality that Glen brings. It feels as though you're a guest in his kitchen, and him being a food excentric he's very eager to talk to you about food, in a way that's not annoying or pretentious. I can't really say what makes it so great with only a few words. He just seems genuinely inspired and passionate. He doesn't claim to be an expert, he critiques his own food creations each time. He's humanly imperfect and it's just plesant to watch. My favorite is at the end of each video where he does the final taste, you can really see the passion in his eyes as he goes for the last judgement, his concentration when he's analyzing the flavour according to his expectations. The show feels very organic, please never commercialize it, keep doing you Glen.

@@GlenAndFriendsCooking I don't expect you to get this, but in order to make your coke recipe better. Use cinnamon, lemon juice (zest and peel included, strain to make sure no zest is in the final product.) Also use the zest of a lime and orange. Taste test and smell your coke and you'll see what I mean!

Why? It’s sugar water, salt, gross flavouring and caffeine source + gimmicky ingredients that don’t really seem to do anything like taurine. In order for an energy drink to actually work; beyond just the effects of caffeine; you’d have to be depleting your carbs rapidly doing some kind of exercise.

dieting is important but so is exercise. pushing yourself to do more and more each day or work out will rush you with endorphins, you’ll feel like a new person and cut the weight.

Have you tried a keto diet? Basically you totally cut sugar and carbs, and that trains your body to use fat as an energy source. It turns the fat into ketones and you use that for metabolism instead of glucose.

My son used to love a red creme sold in Texas under the name Red Rattler. I always thought the red cremes had a "bubble gum" leaning flavor as opposed to the pure vanilla of an amber-colored creme soda.

I'm from Quebec and my girlfriend is from Ontario. Imagine my surprise when I first visited her and I cracked open a crush can and out came PINK cream soda. I was sure they made a mistake and accidently put strawberry soda in there but my gf thought I was insane. An argument then ensued over the colour of crush cream soda. Years later we still argue about the REAL colour. She says pink, I say clear! After doing some research I read that Crush marketed it that way in Ontario (and later on in western Canada) because they added grenadine to appeal to that market. I always thought they tasted exactly the same but I would have to do a side by side taste comparison

@@Amanda-kw1vi I’ve actually seen pink cream soda here in the states before. I didn’t think much of it. Growing up, cream soda was always marketed in pink cans too, so it didn’t seem weird to me.

@@liftordietrying We have a lot of traditional food such as the maltese pastizzi (ricotta pastry) and the maltese bread. (tuna, calipers, bit of sun dried tomatoes) We love our food to be honest.. we have a lot of traditional sweets and pastries too.. tbh the list is so loooong. My favourite would be the maltese rabbit which can be cooked by itself in garlic or can be turned into a stew.

Replace the cocoa nibs with rosewater and use pure vanillin rather than extract with a dash of green food colouring for the Pakistani/ South African version of Cream Soda. Why do SA and Pakistan both have green rosewater cream soda? Who knows? Just enjoy it.

True. I thought they were talking about the Crush brand that actually is electric pink. I think the pink versions have a hint of raspberry or strawberry flavor in them, very very little it's hard to notice but i could be wrong.

I used cocoa nibs in the boil one time while brewing a Belgian-style Tripel. Clogged the spigot and was a huge headache but wound up tasting a lot like cream soda.

I like to make my cream soda with a wee bit of almond extract for an amaretto flavored cream soda. My wife loves those orange cream push-up ice cream pops and a splash of orange extract in the cream soda, works great to match the ice cream pops. A sweetened Vanilla & Orange extract syrup mixed with Chilled Kefir or when making frozen yogurt is like the push-pops with a hint of lactic acid zip.

This was going to be my suggestion. A standard simple syrup is equal parts water to sugar, and I've done what I call "super simple syrup" with 1 part water to 1.5 parts sugar, though that definitely requires heating the whole mixture on the stove to convince the sugar to absorb at that concentration.

I live in CT in the US and Cream soda is always caramel colored. We used to have Pop Shoppe here and they used the same color. I'd guess it is regional and they match to the region where they are selling.

OF COURSE I MADE THIS! It came out great but to me is was missing a flavor note. My paramour likes cream soda a little sweeter too. I added 20g brown sugar at the end and that added a caramel flavor along with a little more sweetness. That was perfect for our tastes.The ONLY downside is that I have had more soda in one evening than I usually drink in a month - ha ha! Jones Cream Soda has a nice cotton candy flavor! As far as the pink cream soda, we have a similar red cream soda in Texas called Big Red.

Google "Crush Cream Soda". For a long time it was probably the most common brand of the stuff in Canada. The colour always put me off a bit, to be honest.

Speaking of favorite sodas from childhood, do you guys have birch beer up there? I grew up in upstate New York and it was kind of all over and it always hovered around my Top 3 Favorites, but since growing up and moving around the country a bit I've found it is _nearly impossible_ to find in some places. It was a real trip going from being able to find generic store-brand versions of the drink to struggling to find even a name-brand version, and I'd really love a recipe that I could make at home to remind me of growing up.

you said that if you're lactose intolerant not to use lactose, do I just leave it out, or do I replace it with something else like sugar (because its milk sugar)

I would replace it with normal sugar. Not in a 1:1 ratio though, because it's less sweet. About 30 % the amount of normal sugar (sucrose) should get the same sweetness. For the above mentioned recipe I would replace the 100g of lactose with 30g of the otherwise used sugar.

And maybe (I'm not sure), in order to simulate the mouth feeling of the lactose, you could add small amounts of food thickener (maybe 0.2 % xanthan?).

Finally! The 2nd version of the Cream Soda experiment. I made it according to your recipe and it was the best cream soda I ever had!!! Also, I made a 2nd batch and this time I added a bit of almond extract and it made the taste of the cream Soda taste as it came from God himself!!!

I've never tried cream soda. I don't tend to drink soda as a rule anyway, but after watching this recipe I'd be tempted to make some of this as it sounds delicious. However, I'm diabetic AND somewhat lactose intolerant. :-( Do you think it would be possible to substitute something like erythritol for the sugar? Is there anything that might make a good lactose substitute that gives a similar mouth feel to the lactose?

I grew up in Western Canada and have fond memories of the pink cream soda. There's nothing like it. Almost sickeningly sweet but, as a kid, I could handle it. It went oh so well with a Mr. Big. Stewarts is the new kid on the block and, as Glen said, less sweet. I think it has a flavour more befitting an adult palette. Having said that, when I lived in Toronto, I was thankfully introduced to Caribbean food. That came with Solo Cream Soda (clear). It is the best I've tasted anywhere. What I find compelling about it is that it has no bitter after taste which almost every other one has. Speaking about your diabetic challenges, I'm sad to say that if you change up the sugar I think you'll be missing the point and much of the flavour. But, don't give up hope, someone may have come up with your alternative.

@Soap Suds We do that (there's a video on the channel somewhere), but when testing a recipe like this that needed so much vanilla... the real stuff would have been too expensive if we failed.

I've heard baker's imitation vanilla is actual better than the real stuff due to being sourced from more than one source. It won some blind taste competition.

I have 2 guesses regarding the whip-looking image on the Pop Shoppe bottle. 1. Cream Soda was historically made using whipped egg-whites, and this was sometimes put ontop of the drink. 2. Cream Soda is sometimes served with iced cream.

What’s intriguing (though not surprising) is that the recipe for the drink and the composition that would produce the perfume that smelt of cream soda actually aren’t that dissimilar. Vanilla, ethyl maltol (which is the primary molecule that gives burnt sugar is distinctive caramel flavour/smell), lactones (the scent molecules that gives lactic compounds their scent/flavour) etc etc.

If you have right flavour for Stewarts Cream similarity, Im happy. However you’ve stated you like lots of carbonation, (perhaps your years at movie theater?) I prefer another balance than a fountain drink would taste. I’ll let you know how mine goes w/your tecipe, my homemade vanilla ( the vanilla orchids grow here) vs good Mexican vanilla - I just cannot go artificial and growing drying our own beans, certainly can immediately taste differences between Central/South American & Pacific Vanillas, I use about one liter/month, but TYVM!! You are trying RootBeer, but how about Sarsaparilla? Like Rootbeer, so many variations- each western family in US lower 48 apparently had their own recipes in late 1800s, early 1900s. Was that the same in Canada? Friends & family there say theyve never heard tell of these recipes, albeit theyre largely from other parts in past generations, either Yukon/Alaska colds or Ontario- curious about 4-5 generations of westward settlers.

Here in Michigan I grew up with Faygo brand cream soda which is clear like the Jones. Also I find the "Red cream" sodas to be a totally different profile than the clear/tan versions.

Back in Ohio we drank Brarq's Red Pop which us kids called cream soda. BTW...BRP makes the best ice cream float. But since we can't find BRP here in Missouri...switched to Barq's Cream Soda.

Growing up, cream soda sold as "cream soda" (or "creme"soda) was clear. Red cream soda, often flavored with strawberry, was always known as "Red Pop" after Faygo's brand name for it.
