Namkeen Jave (Savory Vermicelli) is a simple and quick Indian dish often enjoyed for breakfast or as a snack. Here's a basic recipe for you:
Ingredients:
1 cup roasted vermicelli (jave)
1 tablespoon oil or ghee
1 teaspoon mustard seeds (rai)
1 teaspoon cumin seeds (jeera)
1 green chili (slit or chopped, adjust as per taste)
1 small onion, finely chopped
1 small tomato, finely chopped
A few curry leaves
½ teaspoon turmeric powder (haldi)
Salt to taste
2 cups water
Fresh coriander leaves for garnish
Lemon juice (optional)
Optional Add-ins:
Vegetables like peas, carrots, or capsicum
A handful of peanuts or cashews for crunch
Instructions:
Roast the Vermicelli:
If your vermicelli is not pre-roasted, dry roast it in a pan on low heat until golden brown. Keep it aside.
Tempering:
Heat oil or ghee in a pan. Add mustard seeds and cumin seeds. Let them splutter.
Add green chilies, curry leaves, and chopped onions. Sauté the onions until they turn golden.
Vegetables (Optional):
If using vegetables, add them at this stage. Sauté for a couple of minutes.
Tomatoes and Spices:
Add the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes turn soft and mushy.
Add Water:
Pour in 2 cups of water and bring it to a boil.
Cook Vermicelli:
Add the roasted vermicelli to the boiling water. Stir well to prevent lumps.
Cover and cook on medium heat for about 5-7 minutes, or until the vermicelli absorbs the water and softens. Stir occasionally.
Final Touches:
Once done, turn off the heat and let it rest for a minute.
Garnish with fresh coriander leaves and a squeeze of lemon juice for extra flavor (optional).
Serve:
Serve hot with a side of yogurt or chutney.
