Nascondini Cookies! The Magic of Hidden Flavors Revealed! Nascondini cookies are soft and crumbly shortbread cookies with a hidden chocolate filling. They are easy to make and perfect for dipping in milk or coffee. Nascondini means “hide and seek” in Italian, and these cookies will surprise you with their delicious chocolate center. Follow these simple steps to make your own Nascondini cookies at home.
Ingredients:
280 g (2 1/4 cups) flour
70 g (1/3 cup) sugar
10 g (2 tsp.) vanilla sugar or vanilla extract
pinch salt
140 g (1/2 cup + 2 tbsp) unsalted butter, cold and cubed
1 egg
1 tbsp. cocoa powder
30 g (1 oz) chocolate
powdered sugar for sprinkling
The steps are:
In a large bowl, whisk together the flour, sugar, vanilla sugar, and salt. Add the butter and rub it into the flour mixture with your fingertips until it resembles coarse crumbs. Alternatively, you can use a food processor to pulse the ingredients until crumbly.
Add the egg and knead the dough until it comes together into a smooth ball. Divide the dough into two equal portions. Wrap one portion in plastic wrap and refrigerate for 30 minutes. This will be the light dough.
To the other portion of dough, add the cocoa powder and melted chocolate. Knead until well combined and the dough is evenly colored. Wrap in plastic wrap and refrigerate for 20 minutes. This will be the dark dough.
Preheat oven to 180°C (356°F) and line a baking sheet with parchment paper. On a lightly floured surface, roll out the light dough into a 20 x 35 cm (8 x 14 inch) rectangle. Cut the dark dough into two equal pieces and roll each into a long rope. Place the ropes on top of the light dough, about 10 cm (4 inches) apart from each other. Cut the light dough in half along the center and fold each half over a dark rope, enclosing it completely. Pinch the edges and flip over with the seam facing down. Cut into 4 cm (1.5 inch) pieces and space them evenly on the baking sheet. Using a fork, press lightly on each cookie to make stripes, as shown in the video.
Bake for 12 to 14 minutes or until lightly golden. Let the cookies cool slightly on the baking sheet before transferring to a wire rack to cool completely. Sprinkle with powdered sugar before serving or storing in an airtight container for up to a week.
