3:56 it could be asam keping (slices of Garcinia atroviridis), the soury ingredient used in making of sambal tumis. Some people use it, some people don't. My mom taught me that the philosophy of Malay culinary is that if you have hot (as in spicy hot) ingredient like chillies, you need to balance it out with a soury ingredient. And then ingredients like ginger or galanggal would harmonize the two. it's like the Yin Yang philosophy of Malay dishes.

If you travel northwards 2 hours drive from Kuantan, you will arrive in Terengganu. Our nasi lemak is served with ikan tongkol (skipjack tuna) so u can try something different but with familiar taste of Japan.

It is true Kaz, different states in Malaysia, have different taste (and different ways of cooking & recepies) of Nasi Lemak, it all depends on taste buds of the locals of the states, although basically the ingredients are all the same.

nasi lemak (rice) cooked in a pot taste better than steam version...santan coconut milk will make the rice much more fluffier and richer in taste but easier to spoil meanwhile steam version will last longer and suitable for business...

asam keping is edible but we use it as an additional taste of the cooking. which means to improve the taste of dishes. haha. the moment you put the asam keping in your mouth , i be like " oh no! dont eat that!'" hahahhaha

The brown piece that you ate was called asam keping. We use it to make the sambal taste a bit sour. We don’t normally ate it just like that.

Hey Kaz,this restaurant,started famous around in the late 80s/early 90s,i was young 9 years old boy who stayed in the army camp not far from there & always ask my dad to bring us here,but those days not everyone fortunate enough to have breakfast other than what our mums cook.Malaysia then was not like today.Glad u cover Zaman's Nasi Lemak.

nasi lemak zaman is equivalent to nasi lemak wanjo of KL...they are the landmark of nasi lemak stall at their area and its usually filled with tourist. there are other good nasi lemak place also, which the locals usually go. maybe kaz can try nasi "lemak simple" in the city, its open at night...many like it because its very simple

you near the kelantan already the last state before thailand..there you can enjoy 37 - 40 dish of breakfast..to many variety of kuih and snack..it so colourfull...There also have the bigger sleeping buddha in asian..the higher sitting buddha statues..there also have to many mousqe and 400 year old mousqe...Everybody know kelantan one of the food heaven inside Malaysia...
