NOTE!!! if you don't want the bitter taste of bitter melon, don't include it in the pan frying stage.. just put it in the last part where all the veggies are almost cooked.. 😉😊
INGREDIENTS
-600g pork liempo (pork belly) that was
sprinkled with salt and ground black pepper
and let it sit for about 1hour
-about 3pcs sliced eggplants
-sliced string beans (about 150g)
-sliced "half" ampalaya (about 80g
-5pcs okra sliced
-2pcs chopped onions
-6cloves chopped garlic
-2Tbsp grey-ish shrimp paste
-about 350g pumpkin sliced
-ground black pepper
-about 3/4cup water (add more water as needed)
-2Tbsp oyster sauce
-1/2Tbsp white sugar
-more water as needed to cook the veggies according to one's preference

Kuya ferns more videos please. Grabe yung saya ko ngayon kasi ginaya ko tong recipe mo. Grabe yung kilog kasi nakuha ko daw yung lasa ng luto ng mother niya. Grabeeeeee nakakakilig ng sobra. ganto ang tamang cooking tutorial. yung ibang tutorial mahirap sundin ung technique nila kase katulad ng gantong dish na iba iba ung tagal ng luto ng rekado, kelangan may dapat mauna saka mahuling ingredients kase kung mali, lalabsak or masusunog ung rekado.

@@KuyaFernsCooking i don't think you need to add oil to fry pork fat just let it cook in its own fat. Like cooking bacon in oil,double fat. Everything else is good.

Maraming salamat kuya KFC sa pag-share. Ganito ang gusto kong luto ng pinakbet, walang sabaw. Talagang mapapakain ka sa kanin sa sarap. Pero dahil low carb ako, dadamihan ko na lang ng squash (no kanin).

hehe maraming salamat po.. pero may hint po sya ng pait dahil sinama ko sa gisa yung ampalaya.. 🤣🤣🤣 kung ayaw po ng kakain ng may hint ng pait, pwede wag na po igisa ung ampalaya.. sa dulo na lang ilagay pag malapit na maluto.. 😁😁😁

thanks kuya fern, mula ngayon gantong luto na ng pnakbet gagawin ko pag ito lulutuin ko. lage kase akong disappointed sa karinderya kase ung pinakbet nila laging mushy na ung mga gulay tapos matigas pa din ung kalabasa pero nung gnawa ko to sa bahay, lahat ng kumaen nagustuhan. tingin nla restaurant grade ung recipe kase crunchy pa din ung sitaw, okra at ampalaya pero hindi matigas ung kalabasa tapos ung karne mas malasa, hnd sya maalat na karne lang. tnatanong nla pano ko gnawa yon 😂😂😂

That is not authentic pinakbet,there is no oyster sauce in traditional pinakbet,and its very oily,i think the taste of that version is weird,not impressive

depende po kase sa lasang gustong palabasin ng nagluluto.. kung gusto po nya mas lutang/halata ang lasa ng toasted garlic, garlic po ang inuuna.. kung gusto naman po na makuha ung tamis ng sibuyas, ung sibuyas po ang inuuna.. aun po.. 😉😊

This is not how you cook pinakbet it's too oily and complicated because you fried all the vegetables. You just simply put 'em together in the pot boiled with water, pork and fish sauce it's less hassle at the same time more healthy. Your pinakbet get cook by the water instead of the oil and it's very delicious

I understand, but pinakbet is an indigenous food that originally came from northern Luzon, I just talk about the proper way how to cook it. but you are right people have their own way and style of cooking.

One could always adjust one's cooking style according to one's preference.. coz even in northern Luzon where one says it originally came from, there are a lot of styles that one will see on how to cook this dish.. What more can one expect to other places, where according to one, this dish didn't originally came from.. Hence, no one, with enough experience in the kitchen, will say this is right.. and that is wrong.. or vice versa.. Di nman po tumutupi ung liempo sa akin pag nagpprito po ako tulad sa video.. Ung pork chop po ang mas tumutupi po para sa akin.. Sir siguro may mga friends kang chief na Chinese.. Ganyan kasi ang style ng mga Chinese na chief pag mag lluluto ng gulay iprito muna nila ng half cook bago nila tuluyang iluto same ng ginawa nyo.

Wow! It's pinakbet. It's like Chinese way of cooking. Mahilig sa stir fry muna at pagmarinet at pag blanch. Dito si kuya Fern hindi siya nagblanch ng green veggies. Gusto ko ang version na ito, pero ang hubby ko ay nagrereklamo kung ang inihandang pagkain ay walang sabaw 🤔 ano kaya ang pwedeng ematch dito na may sabaw?😊.

kayang kaya nyo po yan.. opo makakatulong po ung teknik na pinakita ko para di po ma-overcook ung veggies.. tsaka unti unti lang dn po ang lagay ng tubig.. pag naubas/natuyo, tapos di pa din malambot/luto according to your preference, dagdag lang po ng kaunting tubig hanggang ma-reach n yung preferred na pagkaluto sa veggies.. NOTE!!! kung ayaw po na halata ung pait, wag nyo po isama sa gisa ng veggies ung ampalaya.. sa huli na lang po ilagay pag halos maluluto na ung mga veggies.. 😉😊

I have been in the food business for so long, nakaka miss talaga ang pqgluluto, lalo na pag na validate ka, na " me mga tao talaga talaga na ipinanganak na masarap magluto, hindi magaling, KUNDI MASARAP MAGLUTO" Kasi pag magaling ka, kc nga, nag aral ka, MASARAP ka magluto, kc born ka na gifted ka na, nasa sa puso mo ang ginagawa mo, di ba?

Hindi gaanong kumakain ng gulay mga kapatid ko pero nung niluto ko po ito grabe taob ang kaldero namin legit! HAHAHAHAHA and pang apat na beses ko na po itong niluluto,sarap na sarap pa rin mga kapatid ko tsaka papa ko huhu thankyou po!!!

Pinakbet is a favorite of every Pilipino but cooked differently everytime. This dish is challenging and frustrating for me because all the veges involved cook at different times . I want each vege to maintain its integrity - crisp and vibrant , to look appetizing and presentable once plated and presented. Even at parties , PINAKBET looks like PIG SLOP. I welcome anyone to be angry with me for stating that but it's the truth if you're honest about it. You understand and solved this dilemma for homecooks with OCD. In Asian kitchen especially in large families , we're conditioned to dump everything in the pot in one go so that's the fate of this dish. Why didn't I come up with this trick? I'm not gifted in the kitchen y'all , like Chef Kuya Fern. Which by the way , I must thank you for the solution.

lmao. can relate to that "pinakbet looks like a pig slop". I'm so disappointed eating out just to order a mushy vegetable paste while the squash is still hard af. this recipe should be a go-to technique for this dish. everything is cooked just the right way and not ending up just a paste looking mush.
