Recipe :
Navratri Thali
1. Sawa Puri
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 3-4
Ingredients:
1 cup sawa rice flour (barnyard millet)
2 -2 ½ cups water
Peanut oil to fry
Method:
Bring the water to a boil. Add the rice flour and mix well till it comes together like a ball. Cover and rest for 5 minutes. Knead the dough till smooth. Make small puris and fry in hot oil.
2. Aloo Tamatar Bhaji
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 3-4
Ingredients:
250g boiled potatoes
1 cup chopped tomatoes
1 tsp cumin seeds
1 tsp chopped green chilies
1 tsp chopped ginger
2 tbsp chopped coriander leaves
Rock salt to taste
1 tbsp ghee
Method:
Heat ghee in a pan. Add cumin seeds, green chilies, ginger and allow to turn fragrant. Coarsely crush the potatoes. Add potatoes, chopped tomatoes, salt to taste, 1 cup water, mix well, cover and cook for 10 minutes till the tomatoes are mushy and the gravy thickens. Add coriander leaves and serve.
3. Shahi Paneer
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 3-4
Ingredients:
250g paneer
¼ cup cashew
¼ cup khoya
¼ cup tomato puree
2 tbsp yoghurt
½ tsp pepper powder
1 tbsp chopped ginger
3-4 cloves
3-4 green cardamoms
2 tbsp ghee
Rock salt to taste
Method:
Cut paneer into 1” cubes.
Grind together the cashew, khoya, green chilies, puree, yoghurt, pepper powder wit a little water to a smooth paste.
Heat ghee in a pan. add the cloves and cardamoms. Allow to splutter, add the prepared paste and 1 cup water. Bring to a boil, add paneer pieces, salt to taste, cover and simmer for 5 minutes. Serve.
4. Mooli Saag
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 3-4
Ingredients:
1 large radish with leaves
1 tbsp ghee
1 tsp cumin seeds
1 tsp green chilies
Rock salt to taste
Method:
Peel, wash & Finely chop the radish and its leaves. Heat ghee in a pan. Add cumin seeds, green chilies, sauté till fragrant. Add chopped radish, salt to taste, sauté till radish is cooked.
5. Aloo Vada
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 3-4
Ingredients:
2 medium boiled potatoes, grated
4 tbsp rajgira/ ramdana flour
50 g paneer
2 tbsp chopped coriander leaves
1 tsp chopped green chilies
Rock salt to taste
Method:
Mix together all the ingredients to form a dough. Break into 8 equal sized balls and shape into vada. Fry in medium hot oil till golden and crisp. Serve.
6. Fruit Salad
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 3-4
Ingredients:
1 apple
1 guava
1 banana
1 cucumber
1 tbsp lemon juice
½ cup pomegranate seeds
Method:
Wash and chop the fruits in bite sized pieces. Mix in a bowl. Add lemon juice and salt to taste if required.
7. Kuttu Halwa
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 3-4
Ingredients:
1 cup kuttu flour (buckwheat flour)
1 cup sugar
2 cups water
4 tbsp ghee
Method:
Dry roast the kuttu flour for 2-3 minutes in a hot pan till fragrant. Add the ghee in roast for2-3 minutes. Add th sugar, water, mix and cook further till it comes together like a ball. Garnish with almond slivers and serve.
