Great video! So how come neon signs are different colors? Is that just the plastic around them that makes them green, red, yellow etc?

Nope and it is a Awesome question. The colors come due to the mixture of Neon with other gases. Neon itself has a reddish-orange color when Ionized. However when mixed with other gases such as Argon(in most cases) or other noble gases provides a variety of colors.

Could you put neon and argon gas into 1 tube and thus create a different color? Like the way you mix paints to get a different color?

Very good Question. And the answer is Yes and in many Neon lamps a small amount of Argon is added we call this a Penning Mixture. The more you add the more kind of Yellowish the lamp will burn. Also you can Mix Neon and Helium with each other throw in a few mirrors and you can create a Neon Helium laser.

Some dumb people even call low voltage hot cathode fluorescent tubes as neon.
