I went to Nepali Kitchen I Pokhara to try some authentic Nepali food. The owner was a hilarious dude who showed us how to eat momos and other Nepali dishes that I unfortunately cannot remember the name of.
I thought I was in danger at more than one point in the meal but I’m here to tell the tale.
It’s one of the best authentic Nepali restaurants in Pokhara.

Bitter gourd is great to control high blood pressure. Its very healthy. You’re supposed to mix enough daal to make the flavours a little milder. That is why Nepali daal has very mild flavour with very few spices. The food that goes along with rice is usually a little intense because mixed with the rice and daal you’re supposed to bring down the flavours to your own palette. Here’s the way you do it: Mix some curry and some daal with your rice. Dont just mix them lightly but rather mush some of the curry/vegetables/ meat with your fingers. This brings all the flavours really well. Thats the reason nepali food tastes better with hands. Then, take a little bit of achar and put a drop on one morsel of food. You dont have to mix it well like everything else(personal preference). It brings a great strong refreshing, usually tangy taste to the food. You can eat a small portion of achar by itself in between morsels of rice too. Mistakes: 1.Foreigners usually eat rice with all the vegetables and achar and meat together without the daal. That becomes too spicy. 2.Drinking the daal by itself. Daal does not have alot of flavor because its supposed to go with rice and curry. By itself its nothing interesting. 3. Mixing wayy too much veggies/meat/achar with too little rice. You gotta find the balance. Experiement and find your perfect mixture.

I am a Nepali who loves dhido and i have no qualms in admitting that I chew and savour its flavours before swallowing. So don't worry buddy, the way u like it is the best way to have it 🙂

They mix Sichuan peppercorn to aachar. It gives unique taste to aachar, has anti inflammatory properties and good for gut health. You only need to add small amount otherwise it numbs your mouth too much. Gundruk is made out of fermented and dried mustard leaves which contains probiotic and is great. Nepali food is very balanced and healthy. You don't necessarily need non-vegetarian dishes to enjoy Nepali food. Its not very spicy. The dindo( the dough) you are eating is nutritious and filling and one of the reasons you don't chew is cause it sticks to your teeth. You supposed to eat it hot by dipping into sauce by the way. The green vegetable that you liked is nettle leaves(great source of antioxidants), which is first boiled and a mixture of turmeric, salt and garlic is fried in hot oil and poured over to it after to give some flavour. People cook it in different ways.

Its called 'dhido'. Its a traditional dish. U are supposed to take very small amount dip it in curry then achar then shallow it. U dont chew it because it will get stuck in your teeth. Just take a very small amount. U will get used to it latter on. Edit:- bitter is considered to be healthy. Also eating bitter things means u are a matured adult. Which is why we eat bitter melon. Personally i dont like it but my parents really love them. That black seeds i think its called shichuan pepper in english, we call it timur. Really common ingredient in achar.

Dhido(the gooey stuff prepared from millet, buckwheat or maize flour) is a rural delicacy. it is supposed to keep you full and energized for longer period that's why rural folks prefer it. As villagers spend a lot of time outdoors working in the fields they don't have time for snacks. Thus they prefer meals that keeps them full for longer period of time. FYI most nepalese living in the urban areas also don't know how to eat it.

Timur is a nepali variety of Sichuan pepper, timur is has a darker taste but basically the same thing

The flower you taste is Spilanthes. It is called Maruti in Nepali. It is a herbaceous plant and a pickle is incomplete without it. Sometimes we use it to treat stomach ache.

That acidic flower that you just ate is a legend of plant in Nepal. Its 'Marathi' generally found in hills and lower mountains of Nepal and the chutney without marathi is no chutney. Enjoy mate!

It's a technique to shallow " didho ". Being a native Nepalese , i am about 25 years old but still i am also haven't learned to swallow 😂😂. I can feel that....😅😅 Welcome to pokhara. If you order Dal Bhat in Nepal then you get unlimited refills for free. Pay for one plate but gives you many refills.😊😊That's our hospitality in Nepal. Bitter Guard is very beneficial for your heart. It helps to regulate your blood pressure ( good for high blood pressure) and also helps to reduce cholestrol level in your body. In some places people even make juice out of it and drink as a detox juice. Gundruk is fermented mustard leaf ( specially they ferment it and dry it so that they can preserve it) for the winter times when there is not much green vegetable available.

The thing about that brown gluey thing (dhido) is usually for old people without teeth so usually they swallow it because they don't have teeth to chew

For those of you who don't know. So the concept of eating dhido is to first make it small round shape according to your mouth and then dip it in some curry so that it will become smooth and swallow it..

@@Craig_Black brother you could make one vlogs with the moto vlogger of Nepal going around Kathmandu city .. type search “Galli rides” he is a “pathao rider” like Uber drive version but in motorcycle and he could take you around Kathmandu and give you a better explanation of the city … or second option will be type search “utsav vlogs” .. these are the two guys who can speak English … And also while you are there in Pokhara visit the British Gurkha camp the main recruitment centre of the british Gurkha army .. the selection takes place once a year and young men from all over Nepal come to that camp .. cheers brother

It's your first time eatin 'dhedo' so it must be hard to swallow. But in the past Himalayan people used to eat those due to lack of rice production and lack of transportation. That is why Himalayan people are so stronger and can climb hills as well as everest too. For us nepali Dhedo is like a nepali national food because that helped us survive in the past. And haha your reaction were hilarious 😂😂

Before 20-30 years most Nepali people living in hills and Mountains couldn't afford Dal Bhaat. We used to have Dal BHaat only during festivals. Dhido, Makai ko Bhaat (maize rice) were considered the National Food. Dhido itself is a very intergral part of our History. Our grand Parents say If you don't even know or eat Didi you are not a Nepali. I guess now the people will consider Dal Bhaat , But either way we love our food.

I am a Nepali guy. Let me say this- with Dhido, I don't like to eat it without chewing. I need to chew it to feel the taste. Maybe just a little bit of chewing, - not hardly just like other foods.

I think the reason you don't chew but swallow Dhedo is, it stays in your tummy for a longer time. It keeps you full all day so you do not have to eat very often which also keeps you warm up in the mountain.

Until an adult I was not able to swallow it properly ..i was not much fond of eating it until it happened one day when I swallowed it properly .. it's taken mostly in the mountaineos region and also in africa.. but I find it good when it's cold it is because when you swallow you can feel the warmth within as the food passes on and make you feel warm as well. no need of chewing it is because it's already a dough made from flour .. and it's health benefit is that it also cleans your insides as the food passes on.. this much I know of it 👍😊

Gundruk is fermented greens and meant to be really healthy. I personally had no idea we were meant to swallow dhido, I’ve always chewed it. Bro, the thing with that is, Dhido + Rice is Different Way to Eat There is a principle You have to chew your food for at least 32 times for better digestion but at least we do it for 5 to 6 times when we eat meat and everything; otherwise we don't follow that haha; So Dhido is a proper dish to not to chew; If you chew that's okay you are learning but eventually you will forget chewing didho as much as you eat. Dhido is best thing to eat for health rather than the processed rice.

You see before he swallow he is kind of using his hand to make it round/slippery so it’s easier to swallow. He dips it in the curry and uses hand to make it kind of slippery so that it can be easier to swallow.

Its okay to chew and eat it. During the early days people used to hard time brushing their teeth ( because brushes were not available) and that food used to stick into your tooth and specially into your cavities and that's not good so they started saying you should eat without chewing--- ITS OKAY TO CHEW AND EAT... We are lucky enough to get all kinds of foods n veggies on our table. Our grand parents used to survive with Dhido,mustard greens & potatoes as food; as its the only food grown in their area. Donkeys & yaks were used for transtorting goods and it would take days or weeks. They were like superhumans walking all the way up those hills/mountains with a heavy weight on their back. I barely see anyone from this generation doing the same including myself.

The black thing is millet beaten to a powder then cooked in warm water till it becomes like that. The bitter gourd is good for high blood pressure. It lowers it. We Nepalese use hands to mix the right amount of rice , curry, veggies and dal too much of any can cause the food to taste differently. Either it will be spicy or it will not be so yeah using hands is easy than the silverware when you want to know the right amount of everything.

I'm a nepali and I don't like dhido. Have tried it once, would prefer rice. But my parents and lots of nepalis who knows how to eat this, prefer this more than rice.
