This was the coolest inspector/inspection I’ve ever seen in my time of owning a construction company… Most inspectors are a holes and almost don’t want you to succeed in opening up

For inspections after the opening, from my time in the military, many inspectors are going to keep digging until the find something to write up, leaving a few items for them to find of the type that can be corrected without re-inspection can save a whole lot of trouble.

Hi, After thirty years in the electrical trade it still is difficult. Your doing good, it will work out fine and maybe you can cook some other food other than bread. I sense you going to do more than bread, and it is full bakery and slash food cuisine in Lebanese so do not worry, your journey is in baking, follow this path of enlightenment and it will bring you much joy that will keep you on earth for a bit longer. Be blissed and be in peace, love, and Joy in all the efforts. Impressed you did the checklist from memory. I feel the county inspector was very understanding. In my previous food business this relationship was monumental. The other advantage of video taping is you have someone on the record. The next inspector could turn your world upside down, but having today step by step approval, you are good to go. Wish I was in Arizona to help you clean the place up!

@@elbob248 . Yes steel can rust. I have seen lower grade stainless steel that rusted. I have some steel knives which I keep thin coat of blade on to keep from rusting.

I would go with the tankless water heaters; you have a continuous flow of hot water and never have to wait for a recovery.

Just a Great video Jonathan! How do you keep so "under control"? It really would be great to live within your neighborhood. It would be a long drive from Pennsylvania each week to get your products. Can’t wait for your grand opening. I’m not sure how I stumbled onto Proof but I did and I found your fundraising story. Have you thought about reposting it with a call for funding to help get you to your original goal? Some people might be following you that don’t realize you were asking for help. I have an idea..., Why not put up an automatic screen that would work almost like a garage door, you could have the mechanics for it located close to the big opening for the hallway and high up to the ceiling. It would do what the city inspector wants but would also divide up that work space in the back so that you could actually use it when the weather is nice outside. I thought it was a good inspection and the inspector seemed reasonable to work with. He was also right about not getting the tankless water heaters. Wishing you continued success, and unfortunately life is filled with stress. My husband who is pretty young was just diagnosed with early dementia and I am trying to wrap my mind around the fact that we cannot look forward to any golden years together.

Your back door I do not know if this would work there but up here on the east cost of Canada, Garage doors are covered by a wood and screen door panel system. It is 3-4 panels with one or two swinging doors that all bolts together for the summer and then they take it down for the winter. You most likely do not have Nor’easter that rip them to shreds.

Was yelling "Don't Do It" at the screen when you mentioned tankless water heating. You have a lot of washing to do, that won't handle the load. Contractors like tankless because it's easy. Go with a large tank and make sure the plumber uses brass fittings throughout, and replaces the drain valve with a grass one too so you can drain the tank a couple of times per year. It will save you a lot of money and headaches to do it right the first time. If your building has gas, use a gas water heater. It's better than losing all that energy to line losses with electric and a gallon of water takes the same number of ergs to heat, whatever the source.

Disagree, just get the proper size thankless unit(s). Yes that, means properly calculating the flow rate but it's not that hard. And better to not spend all night heating water when you don't need it. I noticed a significant drop in energy expenses when I switched. Sure the up front cost was a little higher (not counting the repairs from the leaking tank), but it paid for itself in a year. Sure, it won't support every hot water use at full volume at once, but not once have I not had hot water where I needed it when I needed it. I wish I had switched 10 years ago.

No tank water heaters grossly insufficient the tankless only cost you money when you're using hot water pay now or pay forever

First, absolutely love your channel!! Would like to pass along something I became aware of many years and build-outs ago, We as human's often form an opinion when we walk into someone's messy house, should we eat dinner here?... This is very much the same on a job site, Inspectors are human, (Well maybe they are). If the work area is organized and keep in good order you almost automatically think, that the work being done, is at least of same standard of workmanship. This is a reflection to both you and the GC when an inspector is on site and can see stuff spread everywhere. Trip hazard's from to back. Just sayin, it may prove to be plus all around to have a clean job site.

I wonder if an option for that read doorway issue would be it install a set of warehouse bump doors, they are essentially just normal doors, but have flexible bump bar that takes the impact of a pallet being dragged through the doorway.

Can someone please tell me where to buy those steel wall? I think I liked the idea of using it behind the sinks. Seems easy to clean and most importantly, it's one piece.

Hand scrubbing that metal wall is painstaking. Can it be done with a microfiber scrub mop, or a steam mop? It would be so much more efficient than up and down the ladder to hand scrub.

Hey there, love your channel and your bakery. Maybe i have a tip for you about de door at the back. Here in the netherlands we use Salco Rapid roll-up doors. You can use that for the back door and also for the door to de rest off the bakery. That way the room is sealed off. Hope this may help you. Greetings from the netherlands Nico

Also here a aircurtain is not allowed because they blow the hot air from near the ceiling wich contain bacteria and dust over your food product when you go through the door with your trolley. This is a health hazzard. Strange that that is reccomended to you.

Seriously?? storage hot water instead of instantaneous??? A. They shouldn't be more expensive, the certainly are not in OZ. B. They are far cheaper to run, (you're not paying to heat up water every ever 40 to 70 mins overnight when you are not using it). C. Far more environmentally friendly. D. They outlast storage hot water by at least 6 or 7 times. Made the gochujang sourdough loaf, very nice, addicted to the stuff now. Shop is lookin good! I presume the steel is Core10? I have a nice set of gates made from it, but you do have to get any oil off at the start so it rusts evenly.

FRP is ugly. I have used, and recommend, vinyl flooring. It comes in an almost infinite variety of colors, patterns, textures, and goes up easily with frp mastic. Behind any cooking equipment neither is acceptable. Steel, copper, aluminum, tile. Rock on!

This episode gave me serious PTSD. In my experience, if an inspector has the choice of giving you a $500 solution or a $50,000 solution, they'll demand the $50k.

I hate to say it but that steel wall is going to become a headache. Even with it polished and sealed it's going to be a flour dust magnet. Which will bite into labor time.

Hi, I'm concerned that the oil on the steel sheets serves some purpose, is it ok to wipe it off? (I have zero experience with work like this, I might be completely wrong)

It's okay to remove. It's used during the rolling process when the sheets are made at a steel mill, and they're shipped with it on to prevent rust. After the oil is removed he'll need to seal it, and he mentioned in another comment he's going to seal it with a polyurethane clear coat.
