Hey Everybody! I've been smoking a lot of cheese lately for friends and family. My Pit Boss couldn't keep up with the amount I was smoking, so I designed and built a homemade cold smoker (with some help from a friend, thanks Matt!)

You did a great job. If you don't mind me saying.... I would put 2 pavers in the bottom on the wood and put a large steel catchpan, like a big cake pan on top of the pavers , then put the smoker tube inside of the pan. Just last month, I used the smaller tubes like yours from Kingsford while cold smoking a fresh catch of fish, came back to check on it an hour later to find the tube in flames and my temps out of control. I was using slightly moistened kingsford pellets as it said to do in the instructions. This strangely happened on a somewhat colder than normal day which was in the high 20's/low 30's.. I figure I might offer this info that will certainly save your smoker and probably home too as this could cause an inferno while using in wood. This flare up could happen with anybody's smoker. Nice design. I would recommend raising that smoke tube off the bottom a bit more because that foil won't keep the bottom of the cabinet from reaching near ignition temperature. Maybe set it on a rack or something.

The foil is actually wrapped around another rack, it's just not that high but it does the job. Had the cabinet for awhile now and no signs of high heat spots. Thanks for pointing that out though!

Excellent video. gathered some good ideas from your design! I know you will tweak the smoker as you use it a few times. Let it evolve as you discover ways to improve the smoke generator, etc.

Within the year I'm going to make another one, but one rack deeper, made out of cedar for weathering, put the smoke tube outside of the cabinet in its own smoke box with some dryer venting to vent it into the box and get rid of the sliding intake and exhaust doors and just have a chimney at the top. You definitely live and learn. Thanks for watching!

Very nice love , like the idea of the cookie racks 👌. One thing I'll do is maybe using ceramic tiles for the smoke tube area.

@@grillinwithv4028 Are there specific guidelines to follow for: 1- filling the smoke tube (how full?) Max full? Half full? etc 2- what type of wood did u use (pellets, chips, saw dust..?) 3-Did u light one side only? Or center? & 4- How many hours did you get from your smoke tube? Thanks for a great video!

Its such a simple design, you could make it yourself. All I did is took the dimensions of the cooling racks and literally built everything around them. I just made sure it had a large enough space to separate the smoke tube from the racks, but I've also seen other designs that have a laundry vent with a separate box for the smoke tube attached to the bottom. I don't have the plans anymore, since I just doodled them on some scrap paper. Adjustments also had to be made as it was being built.

Impressive! I like it a lot!! Nice and simple...clean looking... lots of rack space!! I like the latches!! Where did you get them? What did you use for the door seal?

Thanks a lot! Latches you can get from any hardware store (like the ones they have on toolboxes) and then the seal is just foam with adhesive tape on the back. I got it at home depot, I just forget what it was called.

Cabinet Measurements *the following is all ½" plywood* Door - 20½"×48" Back - 20½"×48" Sides - 11½"×48" Top - 12¾"×21½" Bottom - 11½x17½ *these measurements are for 2x4s* 4 pcs @ 60" 6 pcs @ 4⅝" *these measurements are for 1x2s* 16 pcs @ 11" You'll need: (8) 10"×16" cooling racks for inside the cabinet (2) latches to seal the door shut (3) hinges Some weather stripping to go around the door to make it sealed The things I would change now that I've used it for quite some time now is: - build it out of cedar - build wider feet so its more stable - I've had trouble with the intake and exhaust since the wood shifted and bent a little, so they don't open and close to easily. I would just drill a small intake hole and a larger one for the exhaust at the top and build a little peaked roof so if it rains, water won't enter the inside of the cabinet - remove the deflector plate, it's not really serving any purpose, just leave a 18"-22" gap between your first shelf and the bottom

I am curious about one part. How do you plan to build a smoker using cedar woods and where to find cedar woods?

@@michael-georgeames1835 Not sure where you're located, but if you're in the USA you can find cedar lumber at Lowe's and Home Depot. Most lumber yards will likely carry it also, because it's commonly used for fencing

@@guiturtlewoodalso, specialty lumber yards that provide for local hobbyists, cabinet and furniture makers, etc. all have everything you could ever want. Here in Las Vegas we have Peterman’s; I have purchased walnut and Purple Heart there.

After spending 2 months on RU-vid looking for a Cold smoker and Bingo just what I was looking for Question how long to smoke Bacon and till what temp ? Thanks a lot for posting this

Thanks for your great feedback! I have not smoked any bacon in my cold smoker yet. Bacon does require a curing process and you don't want to be adding any heat to your bacon either. When it's full, I actually rotate the bottom to the top and top to the bottom half way through. Great question!

Thanks! I keep it covered with a large tarp when not in use. I also have the option to store it in the barn as well, it pretty light to carry. It will be well taken care of :D

Great video! Have you had any issues with temp in your chamber using the A-Maze-N tube? If so, do you think it is primarily the deflector that helps regulate the temp? I smoked cheese this weekend and had issues with keeping the temp below 90F. Thanks!

Hey! I had issues in the summer time when it was warmer, now that it's winter, I don't even have to temp check anymore. What are the temps where you live right now? I did find the deflector did help in that sense, but if the temp is still high, I recommend putting in a tray full of ice cubes one or two shelves below the cheese you're smoking. That helped save me in the summer. Hopefully I've answered your question. Let me know if I can help you with any other questions. Happy New Year! - V

It was about 40F at the time. I had an ice tray below the cheese and another one on top of the tube as a deflector. I ended up leaving the door partially cracked to slow the rise in temp. Happy New Year!

@@rtpmedic66 Oh no, sorry to hear about that. I haven't had those problems with that kind of temperatures with it being that cold out. My next suggestion would to have your smoke tube in an external box (like a metal tool box) and use a dryer ducting to connect it to your cabinet chamber. That way the heat source stays out and away from your product and hopefully fixing the heat issue.

It doesn't get hot enough as I only use it for cold smoking. I also never use in temps above 15°C. I would be more worried in hotter weather though for sure.

I wouldn’t be using plywood. The glue used to make plywood may be carcinogenic. Best use solid timber.

Looks good but I do not like the plywood, to many glues and chemicals for me. Also you need to take some better precautions for a fire situation. I have the luxury of large amounts of space and ability in my world though. I have a cold or hot smoke house built on a metal skid. It is a concrete base with a with a oak and maple cabinet.

I have never smoked sausages before. If smoking sausages require no heat source, then yes, you could smoke them in this. I would definitely do some research first.

Plywood contains chemicals. Use untreated pine instead.

Frankly I wouldn't use pine either. If you can't afford cedar use oak, ash, poplar...anything but spruce or pine.

I am no expert but I would have thought plywood would be fine at these temperatures, especially if it has been seasoned well before use. Moving to real wood starts to make this very expensive. I would avoid MDF and chipboard though.

Oh, sweetie you didn't think about the chemicals used in the manufacturing of the plywood and their off-gassing. It's a very nice design, but the plywood industry uses chemicals like Methylene diphenyl diisocyanate, Phenol-Formaldehyde, and Urea-Formaldehyde to glue the sheets of wood together. They off-gas all the time - no matter the temperature. Oh - no...........
