@@SimpleSourdough it definitely makes the dough feel a bit different and I'm sure there's scientific reasons why but it gives the bread a fresh malty gamey grassy sweetness.

I have trouble getting colour on my bread. It very often looks "pale and grey" instead of golden brown - even though I have a tray of boiling water in the bottom of the oven as the bread goes in. Its cranked all the way to max, too. Any suggestions? High hydration, and it keeps its shape beautifully, so I think my fermentation is good. Delayed happy new year! Love the content, keep it coming!

Perhaps your sd isn't fermented enough? Reason being the gluten hasn't breakdown enough to complex sugar. Bake at higher temperature and extend longer duration to get color.
