After creating over 100 pizza videos, I am FINALLY ready to tackle one of the biggest pizza questions on RU-vid... "How do you make great New York style pizza in your home oven" I hope you give it a shot!
POOLISH RECIPE:
150g AP flour
Heavy pinch yeast
150g water
Mix together, cover and rest at room temp for 18-24 hours.
DOUGH RECIPE:
In your stand mixers bowl add in 300 grams room temp water then your poolish. On top of that we will add 550 grams of bread flour. Yes, I am using 2 types of flour for this recipe. Then I’ll add 15 grams of sea salt, 20 grams of olive oil and 15 grams of granulated sugar.
Mix on low for 5-10 minutes. Then cover and rest at room temp for one hour. Before portioning and balling.
Proof in the fridge for 24-48 hours.
Bake at 500-550f for 6 minutes then finish on broil for 1-2 minutes
SAUCE INGREDIENTS (SEE MOVIE FOR HOW TO MAKE):
A 28oz can whole san marzano tomatoes
2 cloves garlic - crushed
15g olive oil
15g butter
1g dried oregano
3 g salt
1/4 cup hot honey
3 basil leafs
