Maybe instead of aluminium foil, use stainless steel foil? It gets used by knifemakers to wrap blades in while heat treating to avoid oxidation. It'll be more expensive than aluminium, but perhaps you could reuse the pouch? Also might transfer heat differently but I don't think that matters with such a large heat source. On a more sensible note, have you tried deep frying in oil to get a sear?

I didn't know stainless steel foil existed. Could be interesting. Deep frying could work, but getting the oil that hot around flames makes me more nervous than molten metal!

@@TuckerOsman You wouldn't need to get the oil as hot as the metal of course, frying oil is definitely hot enough for a maillard reaction. After a little research it seems deep frying to sear is a legit technique. You just have to dry the outside of the meat properly. Fun video regardless.

Ik im deranged but. In order to add a good bite to things I've boiled in the microwave/teapot in my apartment without touching it, i sprinkle flour from the bag on the airfryer tray and onto the food, add a bunch of oil, and put it either at 400 for a few mins or 200 for 30+ mins based on previous tests and vibes. I just check on it and adjust alot. Or i deep fry it in the microwave but you can only do that if its rly small or else youll melt the bowl.

if you do want to re visit this, i like the suggestion someone else left about steel foil, but, i have two methods that may pan out. 1) there is a tool for holding food over a bonfire that's like a box made from a grate on a stick, if you use that with a pipe like a chimney, it may work. 2) put the pouch under a metal grate, like a cooling rack, then pour the molten metal over that. again a pipe chimney would help. oh, a third idea just came to mind, a frame around the meat with the foil pressed over it might help the structural integrity and let you have a better purchase in the force you need to push it under
