I made this last night and it's AMAZING!! I used Belvita breakfast biscuits (I couldn't find digestive biscuits), almond instead of soy milk, and didn't add fruit on top. It's definitely lemony, so omit/reduce the amount if you don't like lemon, but it adds a needed tang! The soft texture is delightful!! I used a mix of tofutti, daiya, and kite-hill cream cheese and that worked perfectly!! HIGHLY RECOMMEND!!

So i made this recipe today and it is absolutely delicious! Perfect texture. I actually used two different vegan cream cheeses (tuffuti and go veggie). I used almond milk instead and graham crackers for the crust. Great recipe, thanks so much!

I've made it in a 28cm pan and adjusted the measurements. This is the best cheesecake I've ever had, and the easiest to make! Thank you for your wonderful recipes
