I made a honey cheesecake without adding any sugar and sweetened with honey~
The white part was flavored with mascarpone cheese, honey, and lemon juice, and the yellow cheesecake was flavored with cream cheese and yogurt
It matches well with honey and there is no sugar in it so it isn't sweet~if you want it to be sweeter, it is ok to add more honey or sugar~^^
I had this silicone mold at home so I used it and I think the cheesecake looks like a beehive and has a honey-like feel to it~~
The cheesecake needs to be frozen solid in the mold in order to hold it's shape~
Finish it off by pouring honey water mixture over the top and the honey flavor will really stand out and make the cake more transparent and shiny~~
It's simple but fancy no-bake cheesecake~^^

▶틀 사이즈 Mold size : 15cm × 7cm
▶Ingredients
75g Cream cheese
40g Plain yogurt
30g Honey
3g Gelatin
60g Whipped cream (whipped up to 50%/doubled in volume)
Food coloring (yellow, orange)
85g Butter biscuits
40g Melted unsalted butter
200g Mascarpone cheese
65g Honey
1/2 Lemon
4g Gelatin
120g Whipped cream (whipped up to 50%/doubled in volume)
150g Water
50g Honey
5g Gelatin
▶Recipe
1. Gently stir the cream cheese until smooth then add the yogurt and honey and mix. Add the dissolved gelatin and mix to combine.
2. Whip the whipping cream until doubled in volume and mix it into the cream cheese mixture. Add in a little bit of the yellow and orange food coloring and once it is incorporated, put the mixture into a piping bag.
3. Pipe the mixture into the silicone mold and put it in the freezer for about 2 hours to harden.
4. Add the melted butter to the crushed butter biscuits and mix to combine. Put the cookie mixture into a 15cm mousse mold and press it down firmly and evenly. Place the mold in the refrigerator.
5. Add the honey to the mascarpone cheese and mix. Add the juice of 1/2 a lemon and mix.
6. Add the dissolved gelatin to the mascarpone cheese mixture and mix. Whip the whipping cream until doubled in volume and add it to the mixture and stir until combined.
7. Pour it into the mousse mold and chill in the refrigerator for about 2 hours.
8. Remove the cheesecake pieces that have been frozen solid in the silicone mold and arrange them on top of the hardened cheesecake. Place the mold back in the refrigerator.
9. Mix the honey and water and add in the dissolved gelatin and mix. Pour in into the mold let it harden in the refrigerator for about 2 hours.
