INGREDIENTS
Digestive Biscuits - 150G
Melted Butter - 115g (1/2 Cup)
Gelatin - 2.5 Tsp
Water - 1/4 Cup
Whipping Cream - 360g (1 1/2 Cup)
Cream Cheese - 250g (1 1/4 Cup)
Icing Sugar - 125g (1 Cup)
Mango Puree - 1/2 Cup
Lemon Juice - 1 Tbsp
Lemon Zest - 1 (Optional)
The base is made from crushed digestive biscuits mixed with melted butter, providing a buttery, slightly sweet foundation. The filling is a blend of cream cheese, Whipping cream and pureed mango with a touch of lemon juice to enhance the mango's flavor. The cheesecake is typically chilled in the refrigerator until set.
