For 2 loaves half the recipe
3 cups filtered water
7 cups all purpose flour ( or home milled for half of flour like I do )
1 cup active sourdough starter
1TBS salt
~ Mix flour and water make dough mix well then cover and let rest 30 min
~ Add sourdough starter and salt to top of dough and dimple it in then fold in and work dough for 5 mins
~ cover and rest for 30 mins
STRETCH AND FOLD PORTION
~ stretch and fold then time 15 mins repeat 3 times
~ stretch and fold then time 30 mins repeat 3 times
~ Then let Bulk Ferment till Doubled
~ Then place in fridge overnight
~ butter loaf pans
~ plop into loaf pans and cover and let rise
~ preheat oven to 400 degrees Fahrenheit
~ bake uncovered for 50-60 mins ( turn half way if needed)
~ remove from pan and put on cooling rack till completely cool
~ slice and enjoy
