I'm Mexican. I love saying that I am Mexican. I'm 53 and that is what I grew up saying. Today, it seems the "proper" word is Latina. I didn't hear that work til I was almost 30. I prefer MEXICAN and love that you used that term to describe yourself. You rock!! 😇

A trick for cabbage it so core and put the whole head in the freezer and then thaw. This will make the leaves pliable when they are thawed. I do this for my cabbage rolls.
Hey Mayra! That looks great! My Mom is Greek, she used to make stuffed cabbage rolls with ground beef, rice, tomato sauce and lotsa lemon 🍋 Yum! This is a cross between cabbage rolls and enchiladas. Being a native, low carb SoCalifornian, who obviously loves Mexican food, that works for me! I can’t wait to try it. I may try it with jicama wraps. I’ve only eaten jicama raw, I have never cooked it. I read it becomes crispier when you cook it, so that sounds interesting. I made the Eggroll skillet, it’s so yummy! ❤🥬🧖♀️💆♀️
Why not just use or make cheese or egg wraps? Also for Mexican flavors for cheap I use Goya Adobo con pimienta. When I use to eat dirty ingredients I used Goya Sazon sin anchiote. Or you might of used the spinach wrap recipe? It would be amazingly if you could make a very low carb keto sope or huarache recipe

Apparently I didn't blanch my cabbage long enough because I broke my plastic fork trying to cut it with a plastic knife! 😆 Had to just dump out the guts and eat the meat/cheese mixture - so I'll probably do some kind of deconstructed casserole with this next time, using cooked cabbage. The whole cabbage wrap thing was too much trouble for me but I made my daughter some with gluten free wraps and she LOVED them. Those were easier! Thank you so much!
So basically….this is Mexican stuffed cabbage. That’s fine. Stuffed cabbage is a good dish, and a Mexican style is probably even better. I’ll be trying this soon. Question…..is it still KETO if I were to use Mission carb balanced tortillas?
When i make enchiladas for the family, i make regular ones for the family, then i just serve myself a bowl of the sauce with cheese on top and bake it. No tortillas.... not sure if id like the texture of the cabbage
Uggg I need 20 more pounds to go...I do intermittent fasting and eat regular foods but WAY LESS. My stomach has definitely shrunk. I think you are way healthier than most people on earth 😂 I do cook, need to be less carbs for the final 20....can't eat fake sugar really bad 💩💩💩

I made her your Potato-less Cauliflower salad & she loved it...for Mother's Day I'm making her one of your cheesecakes topped with choczero white chocolate spread (it turns really good frozen with the chocolate as a hard top)...she always tells me her blood sugar is lower the day after. Mayra is that your home made enchilada sauce? The kind you showed us for the tamales recipe? I made those last Christmas, and it was incredible! But a little work intensive... Do you recommend any prefab sauce?

@@annettediscos The offering we liked is no longer stocked there but it was a "Dietz and Watson" brand. There is another brand, "Empire" there now that is fine, but the slices are less stable. A bit more expensive (less volume per package) as it touts being Organic and Kosher. This is on the North East Coastal region.
