So one grub screw on the thermals mini rail is adequate to hold the arm?

Yes, it provides more than enough force to clamp the parts together and prevent movement. Other companies use the same exact system (Sionyx, MOD Armory) to good effect. Adding threadlocker is helpful to keeping everything locked together in field conditions.
