You could do a video and show us a table of values. Someone could easily put it in a spreadsheet, analyse it, and get the nearest polynomial in ∆x that fits the force values observed... Probably a quadratic. Also, as you add different loads check the average diameter of the spring (record each end and the middle). Use a caliper.
