Ease don't rush your Non a. She is a very sweet, yet fragile, lady who was gracious enough to cook for us on camera. Elderly sometimes get nervous when they have a camera in their face, being rushed while doing what comes natural to them. I very much appreciate this moment you shared with me.

I love making desserts with ricotta since they are healthier, and not as full of carbs. Not too sweet, either. And the olive oil makes for a healthier cake as well. Nonna is so adorable ~ I just want to hug and squeeze her! :-)

For the Cake: 1/2 cup olive oil 3 large eggs 1 cup granulated sugar 3 lemons, zest only 1 lemon, juice only 1 cup whole milk ricotta 2 tablespoons full fat yogurt 1 1/4 cups all purpose flour 1/2 teaspoon salt 1 tablespoon baking powder 2 packets Vanillina or 1 teaspoon Vanillina extract

Carmella Abbruzzese vegetable oil is an unhealthy oil. Organic Olive oil is best. Plus the olive oil has a distinct flavor that is unique to this cake.
Please have more patience with your nonna... you roll your eyes and make faces this is very disrespectful, be nice NOW before she is gone and you wish she took her time, also you should wait until Nonna asks you for something, don't just throw it in her cooking, every woman has her own way of doing things and you have to respect that. You may not like it, but I would never treat my Nonna the way you do. Sorry. I just want you to think about it... Nonna will not be around for ever.
I agree with you. Sometimes Rosella gets on my nerves. HER attitude is funky...I stopped watching her for a while. THE show should be called cooking with Rosella, because she is a control freak..
