Norwegian Potato Lefse (Vegan)

Potato lefse is like a soft flatbread. It is hard to find here in America, though I believe there are specialty stores where you can still buy them. But in Norway you would find them in any grocery store. In fact, most convenient stores would also have them. Norwegians love potatoes, and this is just another way to serve them. During World War II my great grandmother used to make these almost daily. They were easy and cheap to make. One could almost say they were sustained on these flat breads.
They are particularly easy to make with yesterday’s left-over mashed potatoes. Though they look a little like tortillas, they have a very different taste.

In India we call it as PARATHA in that we usually put potatoes and green chili mixed with flour it's so tasty. We also love to make in different versions too like onion, cottage cheese parathas etc. We eat this at breakfast and it's so delicious we enjoy with mango pickle.

Oh thank you for this! My brother picked up the family tradition of making Lefse at Christmas time. I never thought to use leftover mashed potatoes...I love Lefse!

This looks exactly like chapati but made with flour my mom making them right now it's from east Africa. It cool how similar foods are

Never would I have I thought up to roll potatoes and toast them in a pan. The idea alone of a flat potato is intriguing. Might definitely give this a try.

I learned how to make lefse from my Norwegian grandma and my mom taught my girls. They're both gone now but I still make lefse every year with my kids and grandkids. Thanks for sharing!

I grew up on the South Dakota/Minnesota border and lefse is always made at Christmastime there. My aunt makes the most beautiful thin, moist lefse, but unfortunately, it's not vegan (as everyone around here adds butter.) My mom was kind and made some for me with coconut oil. They were really good. I will have to try your recipe though. Seems easier. :)

Chef Ani, I’m so excited about this recipe!🤤🤤 QUESTION: Do I need to add any kind of oil to the mash pot? I usually only add a plant base milk, salt and garlic to my mash pot.
