We're so happy you liked it, even though it wasn't at its best. We really want you to experience kotatsu and want to hear what you think! There is a type of meal called 精進料理 (shojin ryori), which is a Buddhist cuisine. Maybe you've heard of it? Because Buddhism basically prohibits killing, it's basically plant-based, and typically no egg or milk is used. You can try 精進料理 at restaurants in and around some of major temples. Actually, we'll show you what it when we visit 永平寺 (Eiheiji Temple) in Fukui prefecture✨
