I just finished making your pineapple wine. Turned out pretty good, gave a few bottles away to family and they liked it too. I already drank most of my 5 gallon batch in just a few weeks time. Trying to save at least 2 bottles for Christmas. I'm working on a strawberry banana wine now.

I was wondering this question. 1. When to best consume fruit wine. 2. Getting to deep into reading sulfites, ph, and all that entails. Would knowing my ph before and after fermentation be worthwhile.

I like my fruit wines 4 to 6 months up to 1 year.. think the best fruitiness then... I never check ph... just don't think necessary for fruit wines.

Love your show! I have9 gallon of blue Berry I'll be putting bentonite in and 5 gallon of strawberry. If I have extra sugar water can it be stored in the fridge reheated, reused in a reasonable amount of time?

I need help…. I made your 30 day 5 gallons of pineapple and even back sweetened it a little…when we taste it, it seems to have a little fizzy on my wife’s tongue.. it’s just has a funny taste… even our grape 1 gallon batch after setting for one month with bentonite even has that same flavor/taste .we shared a couple bottles with family at thanksgiving and some said it tastes like alcohol. It is 13%. I wish I could send you a bottle to taste it and tell me what it is I’m doing wrong or what your tasting… I followed your recipe exactly and even made sure to sanitize everything good. I wish I could privately talk to you on the phone or even text you?? Thank you for any help!!

There can be a few reasons... it's carbon dioxide getting into your wine. Are you sure when fermenting you are not rushing it... got to let it go where bubbler is like 1 minute and specific gravity is 1.0 or less... don't rush fermentation... also could be fermentation starts back up after Bottling. Are you using potassium sorbate before Bottling. That will stop fermentation from starting creating that carbon dioxide in your bottles. Hope that helps

I let my fermentation go until it is only bubbling between a minute and a minute and 20 seconds and my specific gravity is 1.0 or less in this case it was .999 when I bottled it, I did use potassium sorbate when backswing and bottling… This taste has been in each step of the process… After we rack it from fermentation the taste is there, after we put bentonite in it and let it sit its still there and after we put potassium, sorbate and back, sweeten it and bottling it it’s still there.. one other question I have for you I put number eight corks in my wine bottles and all three wine bottles that I have tried to open their corks seem to break in half and not come out. So I have to push the cork into the bottle to get the wine out… I have bought these corks through the link you have suggested through Amazon. I’m not for sure why they are breaking in half? I am using star san and soaking them before using them. sorry for being a newly needy wine making person!! Thanks for your help

I've had different batches of corks do that.. but I may break 1 cork out of 30 but I always use number 9 corks... try those the cork will be more compressed and may come out easier for you. I am not sure what the issue is but carbon dioxide is getting into your wine somehow. Can't say thats ever happened to me.. another thought is make sure your airlock is filled exactly at the proper level. If it would be too full the carbon dioxide may not be able to escape easily and forcing it back into your wine.
