On the coral at the top, you are right that it once been under water, Water goes up and down. Land does the same. I think that these small islands are splinters pushed up by plate tectonics. Never mind it's beautiful.
Just some serious thought. If the coral where the statue is was under water at one time, there is a LOT of water that went somewhere ! The Great Flood during the time of Noah didn't cover the earth for thousands of years that it would take for that much coral to form. My guess is that there was a massive upheaval in the earths crust (earth quake ?) which pushed the coral upwards to that elevation.
