I love carrot cake, this loooks so good..sure wish I could push a button so could have it for my 50th on Monday! I do like any or all of pineapple, raisins and coconut in it as well, which is more a hummingbird cake I guess.

Good day Chef! This carrot cake of yours,I followed your recipe for yesterday's evening dessert. Hands-down my husband and I thought it was the best one I've cooked.The cake is light and fluffy with a moist crumb that isn’t dense or marshy. The carrot flavor is pronounced without being vegetal and the spices are perfectly balanced and provide a nice warmth. You guys must try it,excellent job!!

I just made this cake for mother day on Sunday. When I tell you everyone went bananas for this cake! I did add raisins, used walnuts and did my own twist on the frosting using 8oz of cream cheese and two sticks of butter. But other than that follow the recipe completely. Thank you

I love this cake.Decorated so pretty. I am older so I would substitute raisins instead of nuts.Hard to chewA generous amount of icing on the inside. What I especially liked was the pretty cake plate and the triple layers. Cake sat high and I could see it better. So moist and tasty. Just make you want a slice.Just Beautiful.

Your cake reminds me of my maternal grandmother She made 3 layer carrot cake in small rectangle pans. I inherited those when she passed.
