For not darkening the Gulabjamun, you have to keep the flame low-medium but mostly low and continuously stir them using tablespoon or teaspoon so that they get fried evenly and get goldwn-brown color. Also after frying let the Gulabjamun rest for a minute or a two and then add them to sugar syrup which is heating on a very low flame.

Hi... You need to fry the gulab jamun on medium flame... And also use the method where you keep rotating them in the oil so that they all get even heat as well as cook well inside and out. And just when they are turning golden brown you need to immediately get them out of the oil because they can turn black in no time.
Dipika di, while adding Gulab Jamun in the oil, the oilshoild not be too hot. Put the Jamuns in the oil which us medium hot and place the kadhai on the slab and Stir it round. When the jamuns start coming out on the Top. Place the kadhai on the flame and Continuously stir the Jamuns so that they get brown equally. The colour Which you want of Gulab Jamuns should be a bit more browny during Frying. Once they are fried, firstly put them in thin sugar syrup (patli chashni) and then after 10 mins. Put them in thick Sugar Syrup (gadhi chashni). Don't Forget to add cardamom in the sugar syrup and the Base. This is how u will get perfect recipe of Gulab Jamun🙂

Gulab Jamun Recipe with Instant Mawa Instant Mawa recipe: 1. In a pan, add 1 tbsp ghee / butter. As this melts add 3/4th cup milk. 2. Stir well and after a 1-2 mins add 1 cup milk powder. Now the flame should be low and keep stiring. Mash lumps. 3. The mixture will turn creamy after 5-6 mins, keep the flame low and keep stiring. 4. Finally the mixture will hold shape and turn into a soft dough. At this point turn off the flame and let the mixture cool. Mawa is ready Sugar Syrup: 1. In a pan, add 1.5 cups of sugar, 2-3 cardamon, 1/2 tsp kesar, 1.5 cups of water 2. Stir well so that the sugar dissolves. Bring this to a boil. 3. Add 1 tsp rose water and 1/2 tsp lemon juice 4. Sugar syrup will be ready in 3-4 mins Gulab Jamun 1. Take the prepared mawa in a bowl. Crumble it into coarse powder using ur hands. 2. Add 1/cup maida, a pinch of baking soda. Mix well 3. Now add 3 tbsp of warm milk and combine this into a soft dough. Avoid kneading it. 4. Rest the dough for 10 mins 5. Gently make small balls with no cracks. 6. Deep fry them in medium hot oil on low flame. Only fry till they turn light golden brown 7. Rest them for 2 mins and then add them in warm sugar syrup. 8. Stir well and keep aside for 2 hrs 9. They'll double in size and gulab jamun are ready.
If u cook d gulab jamuns on medium flame not even low not even high coz if u cook on low d jamun balls will break n on high dey will burn bt on medium flame it will cook properly....
