I definitely share your sentiment on 'non-goaty' beastmen. I think the ones Knightmare minis has done are some of my favorites for that reason. That said, I think it's more difficult to make a beastman that's not a goat, without people assuming it's something different. Any rat beastmen are usually considered wererats/ skaven. Wolves are considered were wolves. Boars could be were boars or pigfaced orks. Tigers could be were tigers or rashkas. Any reptile is considered just a lizard man, or bullywog. Bugs and fish are kind of up in the air, and birds are usually thought to be some sort of tengu, or kenku, or whatever. I feel that to really 'sell' something as a beastman, you have to have it with some obviously 'normal' human elements to it. Sort of like it's a mutant of some sort. If it has a nice cohesive mix of human and beast, it falls into the category of looking like a character from TMNT. Beastmen should be weird looking, warped, destitute, and not entirely sane IMHO. Otherwise, they're just 'animal-folk', from the sylvanian families.

For color inspiration how about looking at Frazetta art or maybe battlecat from he-man?

Very cool different take on the "beastman" trope. If you are looking for inspiration I'd suggest taking a look at the very old Realms of Chaos books by GW. The old GW chaos minis for beastmen where a wide variety of humanoid types. Not just goatmen. Now you've inspired me to make a mixed beastmen type chaos army...

The Titian's head looks like it belongs to a Kaiju instead of a beast man. I wish it had a more realistic rhino head.

Several years ago I picked up some cat man Miniatures adds I think it was either solute or Gen con. I painted them as Siamese cats. Specifically seal points and blue points, they do attract a lot of attention.

One idea I have for a Beastmen army would be a kind of Midsommer/Wicker Man style. Where all the bests wear clean white and grassy green, and have their bases covered in flowers. Maybe wearing little flower crowns.
