One-Pan (30 bowls) Pork Chops with Apple Cider Sauce

Welcome back to the kitchen! Today, I'm testing out a new carbon steel pan while whipping up a delicious pork chop recipe with a mouthwatering apple cider sauce. In this episode, I'll share my thoughts on why I prefer carbon steel over cast iron and how this pan might just be the perfect addition to our kitchen. We’ll start by rendering some bacon, then sear the pork chops before finishing them in the oven. The dish is brought together with sautéed shallots, tender apples, and a silky smooth apple cider sauce enriched with Dijon mustard and sage. This simple yet flavourful meal is perfect for busy weeknights or a cozy fall dinner. Ingredients:
4 bone-in pork chops
Salt & pepper to taste
2 -3 large shallots, sliced
2 small apples, chopped or sliced
250 mL (1 cup) apple cider
2 sprigs sage
30 mL (2 Tbsp) Dijon mustard
Beurre manié (30 mL (2 Tbsp) flour mashed into 30 mL (2 Tbsp) softened butter)
Preheat oven to 400°F.
In an oven proof pan over medium heat, fry the bacon until crisp, remove from pan.
Season pork chops on both sides and then brown in the pan with the bacon fat.
Remove the chops, and then fry the shallots and apple pieces.
Cook, stirring often, until shallots are softened, 3 to 5 minutes.
Remove the apples and shallots from the pan.
Add apple cider, sage, and mustard, to the pan, and scrape to deglaze the fond.
Whisk in the Beurre manié and cook until sauce is thickened and smooth (you may not need all the Beurre manié).
Place pork chops back in the pan with the sauce, cover with apples / shallots, and bacon.
Transfer pan to oven and bake until a thermometer inserted into thickest portion of pork registers 140°F.

I know it can be difficult to pay attention to everything when filming and talking about what is happening but I cringed when Glen poured out the excess bacon fat and **did not** wipe off the fat that dripped down the outside of the pan. He just put the pan back on the burner where that fat on the exterior of the pan is going to turn into a varnish that will be difficult to remove.

Glen...so glad you didn't trash the video. We ALL make mistakes. You've said that 100 times...just make the dish your own. Sound delicious I'm heading to the butcher store now for 4 plump bone in pork chop and making the recipe tonight! I tried the Chicken Thighs/1/2 basmati rice/1/2 wild rice dish a week ago and it was so delicious, I've already shared it with friends and told them about your channel! Good grief, I was expecting to see a pork chop fly across the room and I am sorely disappointed lol. I’m so happy you posted this video, the reason we watch you or at least the reason I watch you is because you are a real guy. It’s also cool that you are in the province next-door. You have a wonderful formula going on, if it ain’t broke, don’t fix it. The “realness” of your show is why I still love watching you. So many of many of my other favorite cooking channels have become way too slick and annoying. If I wanted to watch something hyper produced I’d watch the food network..

I got on RU-vid late today and saw the title just as my sister was putting out supper. Pork chops with peach jam, Worcestershire sauce, and Dijon mustard! I suspect we will see bacon added to the mix next time!

You could just do it in a Dutch Oven on the stove top as well. No oven required but that's the beauty of cooking. For decades women from Europe never cooked protein in the oven that's why most German food and Dutch food are cooked stove top. Dutch oven good name. LOL

Made this for dinner tonight using white wine because we didn’t have apple cider. Also used 1 cup of chicken broth to go with the 1 cup white wine. Glen, I made this dish tonight, and though I couldn’t bring myself to use bacon (used Olive Oil and butter), I felt like I reached the place of becoming a good cook. Hi Glen! Off-topic question here: using rice flour to substitute whaet flour: what about the ratio? Can I use the same amount? Task for me: my sister-in-law and my brother just arrived. She has to eat gluten-free. Sunday is my mom's birthday party. Cakes come from our family. I wanna substitute the wheat flour. Never tried it. I was wondering about any sour to the sauce. Prepared Dijon Mustard makes sense because you get the sour of the vinegar and the spicy sharpness of the mustard. - Two months off, I am jealous. I haven't taken any time off since 2005. We went to the coast for 3 days. I can still remember the steamed lobster & clams.

Some version of this is a fall/winter favorite of mine. Apples work well, but so do potatoes, or even serving over white beans. Thickening the sauce with a beurre manié works, but so does heavy cream or crème fraîche, or some combination. Deglazing with cider/apple juice works, so does hard cider or apple brandy (Calvados). You can add herbes de Provence and capers to the sauce for another tried and true version. Julienned cornichons in the mustard sauce also works. And absolutely agree with Glen, where I shop pork is the value proposition among meats at the moment.

Welcome back! Hope you enjoyed the well-earned time off. Now, you remembered the mustard BEFORE you baked it in the oven, so that's not really a mistake! I would remember when I took the first bite. The vinegar is a neat trick, I'm betting you could use that after the dish baked if you had to. Maybe not the same as before, but still better than nothing.

I've made similar meals to this but not as complex. No bacon or dijon. But apple, pork and onions with a handful of raisins. And some apple sauce onbthe side. My family loved it.

Not about a mistake, but about apples... When I can get boxes of apples from the farmer's market, I like to make applesauce. And I make a LOT of applesauce at a time. The last time I made applesauce I had some habanero peppers from a coworker, so when the applesauce was finished. I portioned out the sweet version, I spiced some with cinnamon, nutmeg, ginger, etc., and I left about 4 cups or so in the pot, poked some holes in one of the peppers, and dropped it in the applesauce while I turned off the heat. I then left everything to cool until it could go into the fridge or freezer. When things were cooled off, I left the pepper in the applesauce, but put it into a container to go in the freezer. I took it with me to a family dinner, specifically because pork chops and turkey were being served. My mother hated it (but she hates flavor), everyone else enjoyed it. The pepper left a bite, but it wasn't actually so spicy as to be uncomfortable. It was just a bite that nipped at the tongue and then faded away, but didn't actually overpower the sweetness of the apples. Sounds like it may have been a similar idea to the mustard or the vinegar you were talking about.

I made this today with a couple adjustments. My chops were boneless (ok - a half a loin). My store was out of cider, so used chicken stock. It was pretty simple and delicious. Goes on the repeat list. 👍🏻👍🏻
