One Pot Rice (Djuvec) is a popular fried dish in the Balkan countries and Austria. There are different recipes in many countries, and for many people it is almost a piece of home. Today we are making a version with chicken, but it is also delicious with minced meat or pork neck. As the rice is cooked with all the ingredients, it absorbs all the flavours and spices. The result is a simple but aromatic dish for the whole family. Try it

500 g chicken breast
200 g washed long grain rice
1 red bell pepper
1 yellow bell pepper
1 onion
2 cloves of garlic
600 ml chicken broth
150 ml tomato puree
2 tbsp olive oil
1 tbsp tomato paste
1 tbsp sweet paprika powder
Parsley

Dice onion, chop garlic finely. Dice the bell peppers. Cut the chicken breast into bite-sized pieces.
Heat the olive oil in a frying pan and brown the chicken breast. Season with salt and pepper. Add the onion, garlic and pepper cubes and cook for 2 minutes. Stir in the paprika powder and tomato puree, then stir in the rice. Add chicken broth and tomato puree and stir. Cover and simmer for about 25 minutes. Season to taste with salt and pepper and add chopped parsley.
