Biltong is a South African beef that is sort of cured and then dried in thin air. It is different from Jerky in the way that it is a bit more moist and fatty. The main flavors of Biltong are coriander and vinegar giving it a deep savory taste that you cannot get anywhere.
For a Kilogram or 2.2 Pounds of Beef:
20mL vinegar
23 grams salt
1 gram sugar
4 grams coriander roasted

If you cut the “steaks” with the grain you can then slice the final biltong against the grain and it is more tender.

@@grant2149 easiest thing to make. make a frame, add mesh and a fan. Biltong making requires no heating elements etc. Hell, we've been making it since 1834 and neither me nor my ancestors have never ever used a box in all our lives. neither a fan. Biltong needs a draught and some way to keep the flies away. the Sugar, salt (preferably saltpeter) and vinegar does the work for you!!! Just one tip: Nver ever use Aluminium or Zinc tubs. It will poison you. The only reason people use dryers is to speed up the process. Speeding up the process affects the taste. A proper biltong hangs for 2 weeks. having said that a proper biltong never makes it past day 10 in my family and we eat it by the kilo not grams.😃

​@grant2149 . Here in he UK. I made one from a kitchen wall cabinet. I enclosed the back with flyscreen. I put dowls on the inside to hang the meat. Use a computer fan, and also a light, 40w, to add some heat if it is a humid or moisture in the air , place that you live. Again, I made a frame with flyscreen and cover the front of the cabinet. Let it dry. Takes about 4 days. Hope it helps. Hang your biltong box on the wall, as cabinet, out of the way.

Hey all South African here there are many ways to make Biltong this way works too well explained but it's not the traditional. Traditional biltong is amazing and I have tried to make it in a dehydrater before it's just not the same it's very easy to make a biltong box and very cheap there are lots of videos that show you how biltong is meant to slowly bry out as the flavor just is way better and we don't use sugar in the spice mix and we also add black peppercorns and if you like a little spice a little bit of chilli flakes when we grind the coriander and salt and we use brown vinegar and Worcestershire sauce with the vinegar 50/50 mix and normally that's when you add the sugar in the sauce. I love too see people are Injoying our biltong it's amazing I have been making it for years and I just can't stop eating it and when everyone else starts making it neither will they😂 Injoy the biltong guys much love too you all❤

You only need salt, black pepper,coriander and maybe nutmeg. Balsamic vinegar gives it a nice taste but you can use any vinegar.I leave my meat in the vinegar for twenty four hours then I take it out and slightly press the meat into a tray with the spices. Hang it up straight away.Don’t dry the meat off. The vinegar kills the bacteria in the meat, so the longer the better.🇿🇦🇦🇺🇬🇪🇷🇺🇷🇺🇷🇺

Greetings from Krugersdorp South Africa! Man was I surprised when I saw the trailer of your video pop up with the word BILTONG and I thought cannot be. This is Goonzquad sister, they hail from the Ukraine and are true blooded Americans now, but low and behold, the original recipe, which my late dad and I used to make biltong. We use a somewhat different recipe to make venison biltong, but the basics remain the same. I have made a biltong dryer from an old computer server cabinet, six fans blowing on the wet biltong and 4 fans extracting the air. This creates a good air flow and keeps the flies off the meat, so you can use it during winter and summer. This biltong box can accommodate between 25 - 30 kg of meat and takes about 5-7 days to dry, dependent on how moist you like the biltong to be. Give your little un a kiss from an unknown family member in SA. Hi ya. Looks good. I am from South Africa, now living in the UK. Make my own biltong. Try something different. Use Redwine vinegar and Applecider vinegar mixture.. Add some black, ground pepper, and if you like garlic. Add some ground garlic powder to the mixture. 😅❤ Enjoy. Aah, another thing. Get some meat that has a bit of vat on. That tastes great, once you cut your biltong, with a little bit of vat on the edge. ❤❤😂

Great video, As a South African, I would add even one more ingredient as I make Biltong myself, Worcestershire sauce, and more vinegar but 50/50 ratio, it needs to be wet, and sit in the mixture for a few days, great content

Discovered your channel through Goonsquad and enjoy your videos a lot. Love the way you pronounce "biltong". The method is a bit different from from the way we're doing it back home on the farm in South Africa. I'm living in Taiwan for 21 years and built a big biltong box big enough to make 20kg at a time. one can't live without biltong or chilli-bites. Try making one batch using only coriander, salt and ground pepper. You'll get a much beefier experience.

one of the best snack you can find in the southern african countries. you can also make biltong stew. boil your biltong for few minutes until its soft and drain it add diced tomato and let them cook for few minutes and add peanut butter and let it simmer for about 10minutes or so. its a must try. you should also try make dry wors ( in afrikaans its called Droëwors )

I want to make the droewors so bad just have to figure out how to do it an easier way. There’s that drying/fermenting sort of portion I’m trying to figure out. Nothing beats South African dried meats though 🇿🇦

@@FatFingerFoods , making droewors is really easy, basically make the spice mix and mix with vinegar (i use Malt Vinegar) and your ground beef (i use of the shelf regular beef, not lean), mix well and stuff into casings, natural casings are best but I've used synthetic casings and they work perfectly. Try a small batch first to test your recipe and get the ratios correct. Drying the droewors requires a bit of space there are plenty of ideas on you tube for a "box" basically all you need is a dry well ventilated box (even a old cardboard box and desk fan and lamp can work, be patient.....)

@@FatFingerFoods I did four samples. Brown sugar, maple syrup, whiskey white sugar, maple syrup black pepper, garlic, whiskey black pepper, garlic, onion, rosemary, thyme. They all have a kosher salt and curing salt base. I'm using cherry wood in the smoker for a mild flavor. I'm betting the black pepper and whiskey will be my favoorite

Almost exactly like we make biltong here in South Africa the traditional way on the farm. I use brown vinegar + a little bit of spice tiemie as well. Personally I use silverside beef with a bit more fat, the same go for game we have on the farm. A person can live on biltong 🤣 3meals a day. Loved this episode and all Goonzquad episodes. Not a fan or coriander myself. Possible to use a Montreal Steak seasoning or a Brown Sugar Bourbon style of coating along with salt and substituting brown sugar in the mix?? LOOKS DELISCIOUS !

Yea you can for sure. I think the main spices in Montreal would be caraway, dried onion flakes, and coarse pepper. You really can put any spice on it making it super unique to your recipe. I was thinking of covering it in smoked paprika seeing if it’ll give it another layer of flavor.

originally biltong was not made using coriander. Coriander to biltong was only introduced after the Boers started adding coriander to their boerewors and then liked the taste. Coriander was introduced into South African cooking by the Malay and Filipino people. I still don't use coriander on my biltong. Also the original recipe asked for saltpeter not salt. Remember the Boers were pioneers and salt was not easy to get hold of. the vinegar makes the meat less tough; the sugar gives it a shine and preserves it, and the salt helped to dehydrate the meat.

Awesome video. Traditionally you cut it with the grain to dry so that when you slice it to eat it cutting against the grain. Keep up the good videos.

I was wondering when someone would notice that the fresh meat should be cut WITH the grain and then when dried should be thinly sliced across the grain for tender chewing . Also , coarsly ground black pepper in the dry spice mix is a big flavour enhancer imo . This is optional though .

It acts in two ways. A flavor enhancer and a sort of disinfectant for the outside of the meat. There is a substantial change it taste from traditional beef jerky which is usually a Soy sauce/Worcestershire base.

Thank you for the video, it was very interesting! Just a few questions to be double sure that this works for me. So the temperature is 35 *C for 48 hours. But after 24 hours I need to let it further dry in the dehydrator but without the heat?

Yes honestly a basement will do. We hung ours in our basement on like a mail from the rafters. Our basement stays below 60 degrees Fahrenheit usually.

You can keep biltong literally for months if you do it correctly. Traditionally we like a lot of fat on our biltong. Try using only salt and pepper, the best results time after time.

As a south african biltong is nothing like beef jerky, beef jerky is horrible, sorry. Change apple vinegar to red wine vinegar way better.

Please watch “Two guys and a cooler on RU-vid or there is many South Africans that will glad show you how to make biltong the right way. No sugar and no dehydrators.
